Cruz BBQ Company in Maypearl for lunch. They've been open just over a year and all meats and sides are fantastic (including the banana pudding not pictured). Between me and my friend we got pretty much everything on the menu.

Was shocked to read they only use straight charcoal in their BBQ pit. That's a pretty unique thing especially in Texas.

A big surprise for me when I first went to help out a family friend's team at Memphis in May was that everyone used charcoal, no wood.

Until I recently got an offset. All we ever used for barrel pits and cinder block/ brick pits was B&B post oak charcoal. Makes pretty much same bbq as I do now. Good smoke ring and flavor. Still use B&B while smoking or grilling

We have a brick pit that my Grandfather built. It's similar to the ones you see at Cooper's in Llano.. Still use it from time to time but I use a mix of post oak wood coals to cook with. I only use charcoal to start the fire and make post oak wood coals to shovel in the pit.

I love those pits. Brings back memories at grandparents and also at fundraisers for Volunteer fire departments, etc.

The church we used to go to down in Magnolia had an old cinder block pit. That's what we used to do. Was labor intensive but made some damn fine BBQ

Got a brisket from Fire Craft in Kingwood for family celebration today. Really good! About 11lbs. Nice finish weight. Point and flat were moist and amazing.

Should be open for retail sales after the first of the year. Open for preorder now.

I have found that the Interstellar line doesn't even really start until 10:20-10:30. If you get there anytime before 10:20 you're going to be at worst maybe 5th in line. We got there about 9:45 yesterday and were second in line. Not bad at all for the #2 BBQ place in the state.

I've never done Memphis-style barbecue, just read about it. Apparently with them it's all about the dry rub and slow-smoking over charcoal. It stems from the 'traditional' method started by Greek immigrants who slow-roasted minimally spiced meat over a charcoal pit like they did back in the old country. One Greek did this with leftover pork ribs and a whole new barbecue cuisine was created.

Yes. His dad retired and moved back to Temple. Dustin and Virginia followed with the girls.

Dustin is my cousin (in-law) and puts out great food. In new location that will eventually be brick and mortar. Expect good things out of him and his dad.

What are some of the non top 50 places in DFW y'all would recommend. Love me Cattleack and Hutchins but hoping to expand out to some other options (I am in Dallas but could make my way out to Fort Worth in the future if need be)

I haven't enjoyed Pecan Lodge or Terry Blacks when I have been there in the past
