Ever think about an Italian wheat option? Id pay more for it.

All real pasta is made of durum wheat, and the rest is made from common wheat. It's possible there really is a condition specifically with American-processed wheat but that seems too rare for a restaurant to make mass-market considerations.

Pasta is made of durum wheat and common wheat makes up everything else. There's gluten intolerance (to the protein in wheat) and a more vague wheat allergy.

Having some mysterious condition to both that somehow only relates to geographical borders doesn't pass the sniff test personally, but I'm pretty sure that when it comes to restaurants it's rare enough that they don't need to have a menu option for it.

I have arthritis.
I can eat whatever I want in Italy. I hurt if I eat the same here.

This is the case for many conditions of others too. Gluten intolerance, stomach issues, other autoimmune issues. Do some research before you sniff again.

It's all the chemicals and preservatives in it here. We went to Europe for a vacation last year, and one huge difference in the good is the lack of preservatives. Food tasted way better, and we didn't gain a pound. In fact we all lost 5-10 pounds.

The namesake derives from Cafe Eccell's top selling entree for 20 years, The Rosie. It's a roasted garlic rosemary tomato cream we made and will resurrect.

The model will be a QSR (quick service restaurant) with drive thru service. We intend to have catering/family meals to take an easy dinner home or book for any sized party or event.

We will be located next door to Blue Baker in the former Costa Vida space.

Yup, I lived on n Poland for the past 4 years, and when I come back to the states for a visit I can definitely tell the difference in the food. The taste, the way I felt after I ate. It wasn't good.

It's the business model and type of sandwiches, especially the bread. The actual business model started in Europe and has a very small presence in Canada and the two coasts.

Casa Mangiare almost comes close. Luigi's, sort of. The rest are pasta houses pretty much.

Lot of reading comprehension problems on this thread. Costa clearly said it was more about the concept/business model and not necessarily about the food itself.

I'm very excited about this! Knowing the quality he will bring and having a quick/casual place to get good Italian food is going to be awesome.

We actually don't do franchises. Much or most of the margin goes to the franchisor, so it's basically just buying yourself a job.

I actually have a concept in mind, which would be very authentic like our village in the mountains in Peloponnesus. I just need to find the right space/location and especially deal. Also, it's not what most Americans would assume it to be. Maybe something will come along at some point. I do plan to include souvlaki in one of our upcoming projects, but it won't be marketed as Greek.
