Our new concept will be Rosie's Pasta Bar and Catering.
We will specialize in several varieties of pasta with several homemade sauces and preparations. To boot, we wil fresh bake daily from scratch Tuscan flatbread for signature sandwich combinations. We will do a specialty tiramisu cup made wirh the flatbread as well. Although not finalized, we are discussing a gelato bar.
The namesake derives from Cafe Eccell's top selling entree for 20 years, The Rosie. It's a roasted garlic rosemary tomato cream we made and will resurrect.
The model will be a QSR (quick service restaurant) with drive thru service. We intend to have catering/family meals to take an easy dinner home or book for any sized party or event.
We will be located next door to Blue Baker in the former Costa Vida space.

I actually have a concept in mind, which would be very authentic like our village in the mountains in Peloponnesus. I just need to find the right space/location and especially deal. Also, it's not what most Americans would assume it to be. Maybe something will come along at some point. I do plan to include souvlaki in one of our upcoming projects, but it won't be marketed as Greek.
