That brisket looks dry and is the fat even fully rendered?

Yeah, fat was fully rendered. I thought it was great. I don't really have any notes from that visit.

Wow. First time I've seen this thread fall off the first page.

I was on my 2010s beat this week. Driving around Texas, hitting barbecue spots for every meal.

Pody's in Pecos was good. Great even, but it may have dropped a couple of ticks from it's heyday. That hominy still rules. They had no ribs, so I went brisket/pulled pork.

Brantley Creek Barbecue in Odessa was a nice surprise. Supurb brisket. The ribs were solid. The sausage was underwhelming. But the venue - it was amazing. Really cool space. Felt like barbecue in a beirgarten.

Let me tell y'all about Pachucos in Midland. I freakin' loved it. The meats were great - textbook stuff at this point. So, not a revelation in that regard. But the menu is incredible. Threw an excellent chicken mole taco on the side. The homemade tortilla was awesome. You know I'm a sucker for the little things like that. Plus a salsa/sauce/pickle bar. Incredible. Oh, and that brisket fried rice was great too.

It's not quite Blood Bros, but it's one of the coolest restaurants I've been to and for Midland? Y'all are lucky. Next time I'm in town, it's stop one (and maybe stop two).

Thanks for the review on Pachuco's. I've been curious about that place, I'll definitely give it a try now.

Brantley Creek kicks ass.

Love Pody's when I can get there. Unfortunately last three times I tried they were either closed unexpectedly, or once on Friday all they had was catfish. It's been a while.

Have you been to Tall City Meat Market's Odessa location? That's another one I'm curious about.

I have not.

Wild that there are so many options out there now. It used to be a wasteland. For BBQ, that is... It's still a wasteland. But there is some decent food now.

has anyone been to Zimmerhanzels in Smithville lately? I used to work and live in the area about a decade ago and we would always eat there. I thought it was great, and for the price it couldn't be beat. Just curious how they are doing these days? I know they changed owners maybe 7 years ago? Thats the last I've heard about them.

They sold the business a while back. I believe the guy that bought it owns Smithville Food Locker.

A pound of brisket over there is $34. BBQ prices are nuts.

Even the guys cutting were suggesting buy the meat by the pound after a family all ordered individual sandwiches

I've actually thought the opposite when I've been there. They pile it on the sandwiches and I've wondered if you actually get more on a per lb basis.

Y'all it's some of the best bbq in the state. I know bbq is supposed to be the cheap meat, but that just isn't the case anymore. When you go the best restaurants in just about any genre, you pay a premium because it's the best.

Also capitalism. Look how long the line is of people paying for the food. Seems to me like it's priced at a fair market value.

Every tray I see on this thread or Reddit is a photo taken after someone agreed to pay for the food. I don't know how we all still act so shocked by the prices.

I understand where you're coming from, but you know it's not johnsonville sausages right? I make a lot of sausage for friends and family and it's a PITA! Most bbq joints are using their brisket trim that they paid $4/lb for. What should the price of handmade sausage be? I struggle with that all the time.
jetch17

Truth was $8.50/link
southernskies
How long do you want to ignore this user?
Yeah that's a reasonable point. But $4/lb is still just about the cheapest meat on the cow and they are maximizing their profits by not wasting product.

I make a lot of sausage too and know it is brutal if you don't have good equipment or extra hands.

My rationale is this… there's one link of sausage in there which is maybe 1/3lb. Without going to fair into the weeds on the breakdown, it's basically $42/lb for sausage. Which is basically now their most expensive meat lol.

I can go to Central Market and get their homemade unsmoked sausage links for like $7/lb I believe for comparison. Or most bbq joints will sell one link of sausage for like $5-$6.

I live in Phoenix which is not just a desert but a BBQ desert too. The Texas monthly pick was Little Miss. Just left and it was outstanding. If the really good Texas places are 9+ on the 1-10 scale this was 8.9. I'll be back.

Been out there a couple of times. First time I went to Phoenix, I made sure that was my first stop.

I tell people Little Miss BBQ is the best Texas BBQ I've had outside the state. They can do better than Arizona Iced Tea though.
