Because they were trying evacuate Hoth, not win the battle. They probably did not want to sacrifice their X-wings.

If I remember right, one of the nameless commanders mentions early on the X-wings are having trouble adapting to the cold. That's why they don't use them to fight the walkers on Hoth.

If Lucasfilm opted to instead build a full sized death star and star destroyer and place them in the same orientation to a similar sized sun, it would look identical to that. The graphics algorithms required to render that have been have been hashed out for several decades (unlike translucent human skin which is much more recent). I'm assuming the proposed political subtext came from the scene where she was imploring the rebellion to get in the fight. They used the "hope" message about 6 times in 30 seconds which could have easily been interpreted as Obama's hope and change message, if you are a cynical person. If I put my politics board hat on it looks pretty blatant as a pro-Obama / anti-Trump message.
However, Occam's Razor says it was simply a nod to ANH.
