I think the major problem is the people here (and Aggies today more specifically) have a better than thou mentality. They think they deserve perfect places to eat because Aggies are perfect. They don't understand that the people who serve them aren't Aggies.

Halibut, I liked Tony Roma's too. One of the best steaks I ever had. Tony Roma's is closing a lot of their restaurants, because of debt problems. Not so much that it couldn't make it here.

Has Chicks been rebranded yet? It's finally been added to the Stripes store locator (Store #2463, open 24 hours) but I haven't seen it in person yet.

Ho sir, not yet. Only thing I know is that Stripes is going to expand the super gas station concept. I will ask a guy I know that works there when I see him about the rebranding.

??? I think most every server in Aggieland is an Aggie, but I'm sure that's not what you meant.

I'm sorry but wanting good food for a reasonable cost for said food doesn't make me better than anyone else. If I'm going to pay someone to cook my meal, I expect it to be at least as good as I would make it if not better. I'm paying for a good meal and the convenience of not having to cook it and clean up, not simply for a volume of food to fill my stomach without regard to taste.

Places fail for different reasons. Is it a franchise? If so, the owner may not be as dedicated to it as some of their counterparts. All McDonald's offer the same menu, but not all offer the same level of customer service.

My theory on why restaurants that make it in other markets don't make it here is that the management brought in when a new chain opens is not as experienced. Because we are a smaller market size, we get a lot of first time managers who don't know how to run a restaurant very well yet. We are used as a training ground. And in our town, customers are gained/lost in the first few months of business.

If I read correctly, Imperial changed hands a few times as it went from really good to mediocre at best.

CSTX, I was told one time that some of the chains bring in their best chefs and cooks at first. That way they get you hooked. They briefly train the new ones how to make the dishes, then they go back to Houston or Dallas. That came from a manager. Sometimes the food ends up being of the same quality or even better; sometimes not.

Dgonzo I've heard the same thing. The company brings in a team to start the new restaurant off right.

Of course a local place without a franchise doesn't have that luxury, and may well have to deal with a higher learning curve.

My theory about restaurant failure:

Money is limited and runs out. Some business owners have a fantasy about owning a restaurant that mirrors a childhood or college favorite dining experience.

If you are not in the restaurant 18 hours a day for the first five years, the fail will occur. You have to live in the restaurant to make it work. The statistics prove this. You cannot let a 21 year old manager determine your future.



Part B: you have to serve quality and good food consistently.


If uncertain about this concept, visit the Barbeque Inn in Houston on Crosstimbers. It is a proven concept that works. Quality. Service. Price.

Restaurants do better with franchise support. Margins are thin, labor is intense, and a franchise steers owners away from typical mistakes.

The space across the street from Blue Baker on Dominik is undergoing renovation...lots of activity going on inside. I think it was almost a restaurant called Katsuya or something similar.

Economics. When restaurant chains begin to hurt company wide, they typically pull out of smaller markets to save the sinking ship.

There is a sign up for Gametime Pizza in the parking lot next to the Chevron gas station on Wellborn in far south CS. It looks to be opening soon. Not sure the name of the gas station, but it is between furniture source international and America's Country Store.

Setting the record straight: Yes we are opening Mad Taco and ground is breaking soon. After 10 years of operating a full service restaurant and an additional 18 years working in them, I am ready for something different. I love tacos and feel like I have a unique product to present with Mad Taco. I hope you will give it a try; if you do, you will not be disappointed. As for Madden's, it is not closing. I have loved Madden's since opening and still find it a rewarding challenge (there is not enough room to write all that Madden's means to me). I cannot deny that I have considered selling the business, but we are looking at other options as well. My concern is always quality of food and service. Owning two restaurants splits my time and I would hate to not deliver on my promise to customers to provide the quality that they deserve at either restaurant. Stay tuned!
