I have talked to Costa directly and the way he talks about steakhouses indicates it will 100% not be a steakhouse.

Not in the city, uncommon in Texas.


Some sort Jewish/NY deli concept maybe but that's what Zeitman's was. Honestly my best bet is something like an Ethiopian restaurant or something like that, as it checks all the boxes without being too off-the-wall.

It's more about the business model than the genre or items being served. Although, there will be one made from scratch item being done on the east and west coasts but I haven't really seen it in Texas. It could be, though. It will also be designed to have a robust catering arm.

TDLR had a filing this morning for a "SPX College Station" which really intrigued me with all the SpaceX news. Turns out it is a laundromat, full name SpinXPress.

Well I mean there's already Mess Waffles. I personally wouldn't touch it with a 10 foot pole. Why? Because Waffle Houae is so well branded and popular that no sooner we open a waffle concept then WH will come. This town really loves its chain restaurants so my confidence is low that we would last, no matter how good the waffles are lol.

We wouldn't want to be franchisees of WH becuase then you're just buying yourself a job to work for WH becuase of the fees.

Lastly, we are focused on growing and scaling our concepts and don't need to take on any passion projects.

At this point some sort of Luby's Cafeteria like concept would be rare and allows for catering and unique items...but if it's just going to be a more expensive bougie Luby's then I'll still be disappointed.

At this point some sort of Luby's Cafeteria like concept would be rare and allows for catering and unique items...but if it's just going to be a more expensive bougie Luby's then I'll still be disappointed.


If you have had a visit to The Cleburne Cafeteria in Houston (north edge of West U), you would not be disappointed.

It's fantastic.

A cafeteria would be great. I would also like to see a food hall (like Union Hall in Waco). I believe there was one planned years ago for the dilapidated building on Holleman (across from JCPenney) that never happened.

I personally wouldn't touch it with a 10 foot pole. Why? Because Waffle House is so well branded and popular that no sooner we open a waffle concept then WH will come.

Cenare's - I do miss that place :-( We used to call Jan. 14th every year to make sure we had Valentine's reservations because they only took reservations a month in advance for Feb 14th.

The two restaurants I miss the most are, in no particular order, Cafe Eccel and Veritas.

The latest on Schulman's Movie Bowl Grille

I have zero knowledge.
On one hand, they must have some hope, if the city thinks an extension is worth offering.
On the other hand, that shell of a building has been there a long time.

I also wonder with Dave & Buster's opening in a couple of months whether they need to pivot on having such a large arcade space in the building.
