The most intriguing moments of BB were subtle, dialogue-driven scenes that involved no murders, no meth, and no excitement. What made BB the best show on television were the little things that "exciting" shows would never think of doing and were unnoticeable to people who binge-watched the show.
Better Call Saul is the same way. As demonstrated in this thread, what makes BCS one of the best shows on TV is a little pink baby toy, an old lady's lift chair, and a conversation between a lawyer and 2 cops in an interrogation room about a nerd sitting fully clothed in pie. None of these things really affect the plot, none are exciting at all, 2 are practically unnoticeable, and only one was remotely entertaining...but they are examples of why BB was the best show ever made and why BCS is well on it's way to being in that same conversation.
The best parts of BB & BCS are the week-long discussion between episodes and 10-month long discussion between seasons. These discussions make things like delivering newspapers and working in a toll booth fascinating. They enhance the show 100 times over, and their absence is why binge-watchers think BB's first 2 seasons were boring.
