DAP provides Nitrogen for mailard reactions (non enzymatic browning) to occur. These occur between ~270F and ~320F. Another source of nitrogen is ammonium bicarbonate. It is a leaven used by professional bakers.
As DAP breaks down around ~270F it separates into two molecules of ammonium and dehydrate-phosphoric acid. So it provides both the nitrogen for browning and the acid for inversion.
yep.. lots of smart dudes on that board that like to dissect the nitty gritty of why and how. Always a great resource.Ornlu said:
Thanks for that first source! The gold is hidden within:Quote:

That's the exact info I needed.
2 more on the hump, or is the pic just deceiving? Doesn't look like you could fit 4 on the floor from that angle.Moxie said:
Yes, there are two intertap faucets now. Capacity for four kegs which is why I have 4 holes drilled. I'll fill it out over time.

Are you getting foam, those lines look short?
Man I'd really recommend the John Guest fittings, they make it so easy to move lines around for cleaning or adding/reorganizing, adjusting line lengths, etc. Man with 6 kegs, dealing with those worm clamps was such a pain. I did the right angle on the shanks too, so they point straight down. (but they swivel, so lines move easy if need be.)
With the swivel, after shipping you're in $32 to outfit 4 lines, $20 w/o swivel... very much worth it.

One on the hump, one on the floor with the other two. The picture looks deceiving with cans/bottles on the floor and a towel. I have fit 4 in there empty.
The lines are 6ft and I am getting some foam, although haven't played with the lines/pressure yet to try to dial it back (just got it together yesterday afternoon) but appreciate the pointers.
I did look into the fittings but honestly had not idea of what I wanted in the keezer or really how any of the parts came together. The fittings will be on my list of upgrades sooner than later.
