Its a bachelor party... Some people were late so we ended up at Stiles Switch. The line at La BBQ was bonkers.

So I'm planning on hitting up slow bone tomorrow. What time should I be there for the cilantro sausage and brisket?

How'd you like Stiles Switch...it did not impress me when I went a year or so ago.

I've been a couple of times. It's a good fallback option for the other places. No lines, open late and consistent. I've never had anything bad there.

I hit Franklin last Wednesday. Good as always. Got there at 7:24 and were 3rd/4th in line. Wednesday is generally the slowest day. Here are stats from that day FYI:

6:15 - 1st in line
7:00 - 2nd in Line
7:24 - 3rd/4th
7:30 - 5th-10th
7:45 - 11th
8:00 - 25th
8:10 - 32nd (First person not under cover)
8:30 - 43rd
9:00 - 85th
9:45 - 122nd (They were estimated to get food at 1:30)
9:55 - 130th (Line reaches the corner)
10:15 - 139th
10:25 - 145th (Still no "Last Man Standing" sign. They said they still had about 40 pounds of meat left)

The line ended up maxing out at about 160.

You should be fine at noon. I missed the cilantro sausage and ribs at 1:00 on my last try.

Got there right at 11 this morning. The cilantro sausage was excellent. Wasn't, however, impressed with the brisket. Not much of a smoke ring and it had a bitter taste to it. Beans weren't much to write home about either. Perhaps I just caught Em on an off day.

Hit Heim Barbecue in Fort Worth twice this week (they're only open twice a week). This is the best brisket in Fort Worth!

They've been getting a ton of pub over the last month or two - glad to see they got the CDub stamp of approval, too. Need to make it out there sometime.

I went to Pecan Lodge today. Very good food and great experience. Ribs & jalapeo sausage we're outstanding, brisket was good but I have had better many a time. Burnt ends were good as well but lacked the intensity of some of the better ones I have had. Sides were all great. I think a few joints in Chicago may have spoiled me when it comes to burnt ends and brisket.

I had Slow Bone for the second time today and I'm still not sure what to think of the place. My first visit the brisket was great and ribs weren't very good. Today the brisket was not great (not much flavor and borderline dry but with a nice bark) and the cilantro sausage was good but almost had a boudin texture. The real star of both visits however was the fried chicken. I definitely think they have the best fried chicken in town and probably the best I've had anywhere. I have a hard time liking a BBQ joint based on something that's not BBQ, but that chicken will get me back there.

You shut your mouth. Chicago isn't going to spoil you with their brisket when you live in the MIGHTY state of Texas.

Hit up Hutchins and then get back to me.

Tickets for the Franklin bbq behind the pits dinner go on sale tomorrow at 10:00am. Hopefully the little beyatches on the "Franklin line" thread won't see this.

Went to their site and doesn't mention price. Any clue what they are, or what similar events have been?

Also posted on food porn thread but since TM put this together, I'll repost it here:

Tonight I was fortunate enough to attend the Texas Monthly Fire & Smoke dinner at Underbelly, which was a collaboration that combined the skills of Chris Shepherd and Ronnie Killen. As you can imagine, all the dishes were superb and plentiful. The beef cheek and beef belly porchetta were very flavorful, the fish was perfect cooked and the Tri tip was smoked and then hit a sous vide bath for three days. The bottom pic is the plastic wrap being peeled back off the dessert and the smoke pouring out. There were also ribs, beef tartare, and Asian beef skewers as appetizers. What a meal!

I was very fortunate to attend the Texas Monthly Behind the Pits dinner at Franklin Barbecue last night. There weren't a lot of pictures taken since I was catching up with some old friends but here is what I have, including the money shot:

All the food at the Fire & Smoke event at Underbellys was amazing. My wife works for TM and puts these events on so I'm usually lucky enough to tag along. Missed Franklins on Wednesday unfortunately though.

Heading to Dallas for a getaway with the wife Saturday. Going to get to Dallas around 11:30 am. Should be do slow bone or pecan lodge if we don't want to spend most of our time kid less waiting in line? TIA

Of those two? Slow Bone no doubt. Pecan Lodge packs out at opening on Saturday.

Has anyone tried Texas Pride Barbeque in Adkins. This is east of San Antonio on Loop 1604. I ate there yesterday and I really enjoyed it. The brisket is mesquite smoked for 18 hours. It had a great flavor and bark. Their sausage was great also. Sides were meh.

I like the bbq from Lockhart that's pecan smoked, but after trying Texas Pride Barbeque, they have become my favorite.

Thoughts???

I recently had 1050 bbq in Dallas, it was very good.
Brisket- top notch prime brisket, incredible bark, very juicy, and I had some burnt ends which were great. Best brisket I have ever had.and I have been to some excellent brisket joints except for Franklins.
Ribs-smoked to perfection, great texture, lacked any flavor though. No seasoning so I was very disappointed. The smoke and the texture was on point.
Sausage-very good.
Potato salad and Mac & cheese were decent. Fried okra great.

I was there at 5:30pm so they still had good cuts left. That brisket is legit

Anyone in the Longview area should check out the original Bodacious BBQ which has been reopened on Mobberly Avenue. It's being run by a guy who was at Stanley's in Tyler before opening this location. It is nothing like the other Bodacious's as far as quality goes in that it is actually good. He had beef ribs last Friday. Only open Thursday-Saturday.

Had La Barbecue this week. Brisket was good, the sausage and chipotle slaw were not.
