Thought it would be fun to start a Griddle thread.

Pretty basic start, but, nicest morning in a while to get the Blackstone going.

French Toast and Bacon

Attempting a 7-Egg Omelette. Managed four good folds before the fail transferring to the platter.

FIDO - looks darn tasty, nice work. But I'm curious how your rear grease drain functions? It looks like your griddle is up against a wall? I'd like to build my griddle into a stone/brick outdoor kitchen, and the rear grease drain function is something I've been wrestling with. I'd appreciate a pic and/or description of your setup. TIA.

I use the cheap disposable aluminum mini-loaf pans under the drip tray. I just pull it out a bit from the wall to toss them. Not sure what the best solution for a built in would be. I have a earlier generation front drain 36 as well and much prefer it. Just shove an empty beer can on it and toss it when I finish up.

What is your budget for this? I went with a Blaze stainless griddle.

Bo - Thanks for the suggestion and build link. I received a 36" Blackstone as a gift and already picked up an NG conversion kit, so I'm not shopping anymore. I'll likely reference your build link as my project plans develop. Thanks.

Getting the day going with some Gringo Breakfast Tacos

Looks good!
I did chicken quesadillas for 10 people last night on mine. Worked great. I used the super huge flour tortillas to simplify and not have to make as many, they worked great. Cut into 6 or 8 pieces.
Trying to decide what's for breakfast and dinner tonight.

That's actually a very good substitute for the OEM grease catcher that comes with the unit.

The can catching the dripping is actually pretty brilliant, I've fixed my issue, but always forget to line up the drip tray so I have multiple grease spots on the patio from cooking bacon.

We have a little weekend getaway on North Padre. Got the original Blackstone so we could move the cooking outside and not heat up the place and smoke it out. Realized I couldn't live without one at home so I convinced the wife to let me put one on the porch when they came out with the Pro design

Blackened Trout, Dirty Rice, grilled Zucchini

4 Trout in the box, 9 filets on the Blackstone. Impressive

Ha, Couple more Trout caught after Pic #1 and a whole bunch of Miller Lites. No need for a Bottle conditioned lacto blah blah blah super sour double IPA when it's a hundred degrees outside

Love this thread! I also have two Blackstone 36" griddles, but both of mine are the original design. I got my first one 5+ years ago. Two years ago I built an outdoor kitchen, and originally planned to make my original griddle 'convertible' so I could use it as a built-in, and also take it to Aggie Softball tailgates. Then I decided to just buy a new one for the kitchen and keep the original one for my portable griddle.

I had to modify the drain to fit nicely in my kitchen

One of my first cooks on the new griddle was hamburger steaks and grilled onions for smothered steak

Grilled chicken and veggies

I've cooked a ton more things on it, but can't find any pics handy.
Breakfast: bacon, eggs, hashbrowns, pancakes
Hibachi: Chicken/Steak/Mahi/Shrimp, fried rice (onion, peas, carrots, fried egg), sauteed veggies (Broccoli, zucchini, mushrooms)
Other: Fajitas, quesadillas, blackened chicken, burgers, etc...

I really like taking a pound of thick sliced bacon out there on the weekends and cooking breakfast so I don't mess up the inside kitchen.

Where did you find the NG kit? Haven't been able to find it in stock anywhere and even their own webpage is now pulled.

Cook rice the day before. Err on al dente. Refrigerate.

Use high heat. Use oil with high smoke point (I use avocado oil.

Add butter, eggs, soy sauce, and I do some teriyaki. Throw some frozen pea/carrot mix in towards the end. No need to defrost.

Finish with sesame oil for flavor at end, plus sesame seeds and green onion to garnish.

I do chicken/steak/shrimp after rice is done

Also, don't overload it. You are better off doing two or three smaller batches.

Directly from Blackstone via their website. I think WalMart carries them as well.
