That definitely is not a copperhead.
I would guess that it is a Diamondback Water Snake, which is not venomous (and more common than Cottonmouth). Unless the catfish was bitten by another snake or that is a very skinny Cottonmouth, 'poison' from that snake did not make it turn yellow.

Haven't been out in a while but here's a prego Eastern gartersnake from SE Texas recently. These are pretty hard to locate in the state.

Found this fella today. Prettiest Texas rat snake I've ever seen.
He wasn't very happy but I knew TexAgs deserved a better picture so I moved in closer
I tried to pick him up for a selfie but he bit me in the hand. Funny because all I've heard is how friendly rat snakes are. ...now my hand feels fat and funny .

Far more dangerous for the snake in this case. They lose teeth when you jerk your hand away and this can lead to a potentially fatal mouth infection. The reaction to those snake teeth are probably why your hand feels fat and funny.

Also, lest any of the less snake informed think that is actually a rat snake or that I was actually bit, I should be clear.
It was a beautiful copperhead curled up in an old rock wall right in my travel path. As miracles would have it I actually had the dogs at heel so they didn't cross first which could have resulted in a strike. ...because that snake was an aggressive *******.
I took a few pictures but because he kept striking I chose not to get close enough to move those leaves in front of him so I apologize for the slightly blurry photo.
Then we backed up, found another trail and went on our way.

Here are a couple snakes that I have seen this summer (sorry for the lousy iPhone picture of the rat snake). This guy put its tail on a leaf and then shook it so that it made a sound similar to a rattle snake.
A week later I saw this guy in about the same place:

The following week I found a skeleton of a snake (maybe one of these guys) near this area. Probably fell victim to the owl.
