it looks like they sliced into the brisket and then put it back on the smoker and then cut you off the end that was exposed to the environment.txag2008 said:
Tried Cattleack in Dallas today for the first time. Got there at 10:35 and got food just after 11. I think the line was shorter than normal due to the weather/rain.
Brisket - disappointing. Seemed like there was too much heat, smoke, or both. Had an unusually dark color.
Port Ribs - good, fairly sweet, nothing special
Pulled Pork - ok, pretty fatty
Pork Steak (not pictured) - the best meat I had. Good stuff.
Mac & Cheese - really good and had a bit of heat with green chilies
A really good meal, but was honestly let down a bit.
Why would they even serve you that?
Seems like it would be better to just toss it and tell people they weren't happy with the quality that day. I would be much more likely to come back somewhere if they told me that.

Thought their beers were above average. Had some interesting brews. 3.75 average for my flight on Untappd.
Their brisket was traaaaash when I went. Unrendered fat, grainy rub. Ribs were better, but not great. I didn't see any sort of promise in the meats. Didn't think it was just a bad day. I threw some of the brisket away, but finished my sides if that tells you anything.
I've had that beef rib before and enjoyed it.
I've been to Cattleack 3 times now and the last 2 times it wasn't like it was before the TM list came out. The first time I went I told my buddy that this place is in my top 3 and then a few weeks later they came in 3rd behind my top 2. Now I've been back a couple times and it hasn't been as good. I think they're trying to do too much rather than focusing on what got them in the top 3. They're doing whole hog cooks, and pastrami ribs, briskets, etc. Get e-mails all the time from them talking about new items that are coming out and every time I just think about how they need to focus on their brisket to get it back to the first time I tried it. It was legit! Right up there with Snows and Franklin's. Too bad.
If you're referring to Cattleack, I agree! I posted on here a pic of my last visit and the brisket was trash. The guy actually cut a piece off and told me he didn't like it so I could have it for free. If it's trash, then I don't want that **** either! Ha. Don't know why people serve stuff that they know is bad.

Interesting. Have only had fantastic food and great service. Still one of my absolute favorites.

Millers in Belton is right off of 35. They are open on Mondays, but I'm not sure if it being Christmas Eve will change things

Your correct. I just looked and they're closed on Monday. I was remembering wrong.
What's funny is I misread what you originally posted as "aren't open Mondays". So we'll call it even.
Another year, another trip to Franklin BBQ. Excellent as always. Truth is damn close IMO but I still don't think anybody quite matches Franklin. I still think his ribs are vastly underrated, top 5 of all the places I had and I even had the end three bones that were smaller than most, still amazing.
completely agree, I don't even much like pork ribs but his are on a whole other level.
Corkscrew today. Love being close to a place putting out this amazing stuff. It was the first time I've gotten there at 10am and didn't get a number. Got to be holiday traffic.
We went 2 Saturdays ago and got number 13 at 10AM. It was cold and wet weather so I was surprised the line was around the building when they opened. We talked to a group from Beaumont on the porch while we waited and they said they come over once a month.
I absolutely love Corkscrew, they put out some amazing Q.

Closed until 1/3/19.
Planned on hitting truth on the drive up here to Georgetown only to see that they were closed the rest of the year. Figured I'd finally check out black box then only to read that they're closed the rest of the year as well. Balls.
Rudy's isn't top 50 anyway.
Even for Rudy's, that brisket looks pretty bad.
It looks like something you'd find in the deli counter at HEB.
The responses on the twitter feed are pretty funny. Rudy's of course isn't the best, but it doesn't deserve the hate that it gets from some people.

I know for sure that Snow's will ship. Not sure on Franklin. I've ordered from Snow's before, but it can get expensive quick when you factor in overnight shipping.
