I've been wanting to try that place.
it looks like they sliced into the brisket and then put it back on the smoker and then cut you off the end that was exposed to the environment.txag2008 said:
Tried Cattleack in Dallas today for the first time. Got there at 10:35 and got food just after 11. I think the line was shorter than normal due to the weather/rain.
Brisket - disappointing. Seemed like there was too much heat, smoke, or both. Had an unusually dark color.
Port Ribs - good, fairly sweet, nothing special
Pulled Pork - ok, pretty fatty
Pork Steak (not pictured) - the best meat I had. Good stuff.
Mac & Cheese - really good and had a bit of heat with green chilies
A really good meal, but was honestly let down a bit.
