Hard to argue with your top 2. I'd put Cooper's in Llano up there with them for my top 3 probably.

Based on my one experience 2 years ago I'd agree with you. But im just looking at what everyone else is saying that has been more recently than me. Next customer lunch that my office has out that way, Im gonna try to get our guys to meet at Blacks and see if what I'm hearing/reading is true or not.

I think their issue is with consistency. They can occasionally nail it, but it's hit or miss. Hopefully you'll get them on a good day again.

Brisket and ribs were amazing. Pulled pork and sausage just ok. Think Hutchins has better sausage.

Easily the best brisket I've ever had. Makes me want to fire up my egg this weekend and tinker. Have some ideas on what Franklin does with his flavors (outside of SnP).

Pretty clear he does roughly he same thing on pork ribs and brisket as far as seasoning and 'other things' go.

Ribs were falling off the bone without much effort, and as mentioned outstanding flavor. They also doused them with some sort of sauce or juice right before plating. Think it's beef broth, maybe juices / drippings from the other meat?

Took roughly an hour to get served (starting from 25th in line). Totally worth it. Pregame atmosphere was fun while waiting for it to open, save the one sip behind me who could barely stand up thanks to a couple too many Lone Star Beers.

They should have been in the TM top 10 IMO, but I don't think Daniel Vaughn wanted to put them in there since they'd only been open for 6 months at the time.

One of the rules of the list is that a joint has to have been open for 1 year to make the list.

Well they opened in December 2016 and were on the overall Top 50 list. I think they bent the rules for them since they started pop-ups over a year before the list came out IIRC. They didn't actually open for permanent business until last December. I just don't think he put them in the top 10 since they already bent the rules for them to even be on the list at all!

I've had 2M, Franklins, and Snows.

2M hangs. And hangs VERY close. So close they could be numero uno.

2M wasn't on my radar until now. Definitely going to try it in a few weeks.


Here's sort of a new question (possibly) for you guys... which place do you guys think is the best in terms of wait time vs. food deliciousness.

It got me thinking, Cattleack had very comparable brisket to Snow's and I waited less than an hour vs. 3+ hours. That alone, I would go back to cattleack if I had the choice.

Franklins may have the best Brisket, but the 3-4 hour wait is way above average. Maybe another smokehouse has a less delicious brisket but still awesome w/ only a 10minute wait.

So who has the best wait to deliciousness ratio

I now see that the rule was must be open for at least one year for the top 10, and must have been open by early 2017 for the top 50 in total. That makes sense, and now I have no doubt that if that one year rule wasn't in place, 2M would have been in the top 10

Man, it's always been Snow's for me. I can't imagine 3+ hours in that line. I don't know what it's going to be like during this football season, but I've always enjoyed showing up at 7:45 and eating by 8:30.

Especially if you call ahead and order to go. There's an entire separate counter for to go order pickup.
That's what I do. Even when there's a line, it takes two minutes to get what I want this way.

I posted this earlier, but 407 BBQ south of Denton has almost no wait but some good BBQ.

No, it's not Franklin's. But it is so old school. You show up. You order. You eat. You get some good to very good BBQ, but not amazing. You are done in well within an hour. Site is pretty bare bones.

It's not hipsters and tourists. It's construction workers and locals.

Truth and Louie Muellers out of the top 10 are my favorites in terms of shortest wait for really good BBQ. Now I've never been to LM on a Saturday, but on weekdays you wont wait more than 20 minutes. Truth is a little longer in Brenham, but even when I went on a Saturday it was a little over an hour. When I went to Truth a month ago on a Friday, it was about 30 minutes and they had free beer and water.

Hello everyone, I just now found this thread! I haven't read through all 18 pages yet. I've been working my way through the Texas Monthly list and have 21/50. We decided to take on the challenge of hitting all 50 because we live in Houston and both of our parents live in Amarillo.

Anyways, we've hit most of the joints outside of the ones in Houston (even though we live here) and Dallas. We've made two trips to Amarillo this summer, and I've had a hard time convincing my wife to eat BBQ once we've gotten back. Some of my favorites so far are Franklin's, Truth, Evie Mae's, and Cooper's. I'm sure these have been mentioned already. One that may not be quite as popular is Baker Boys in Gonzales. I was really impressed with the food their. We plan to make the trip to south Texas over labor day weekend.

We still haven't been to Snows, Louie Mueller, or 2M. Any tips on hitting those as they seem to be the more popular ones that are harder to get into.

LM has a wait but not outrageous. Get a beef rib. Best Bbq I've had. Never had Franklin's but I don't see how it could be that much better than LM.

I understand. Took me a few years before I finally decided to do it. It was a blast. Assuming you like drinking early and socializing with other people that are obsessed with TX BBQ you'll probably enjoy it. If I were going to do it again I'd take some booze, chairs, and possibly 3 other people that like to play 42.

So 2m is drawing huge lines but they dont sell beer
And complained about wood prices 0San0000

Not sure they know fully what they are doing business wise to maximize profits

Yeah its amazing to have lines but losing free money
On beer coild make or break their business

may not be the best, and that is a hard question to answer. I have tried a big chunk of the top 50, and I am a huge fan of Snow's and Franklin's, and I fully think they are worth the wait, but there are times when the time to wait is just not available. One of the newer places that fits your description for me is Terry Black's in Austin. I have been there twice during normal lunchtime hours; have waited for less than 10 minutes each time, and it was incredible each time! The brisket is super high quality. The sides are great. Nothing was subpar. I don't think it is on the level of Franklin's or Snow's, but it is not too far behind. Great location and comfortable spot as well.

I went into my first trip to Franklin's looking to rag on it because I didn't think any food was worth a 5 hour wait. I was wrong. It's not something I would do every weekend. But once or twice a year is definitely worth it. Plus it's a good excuse to sit around and drink beer.

I'm thinking about trying out Cattleack tomorrow. How crazy does the line get. Do I need to show up at 10, or can I show up at 11:15 or so without waiting an hour plus? I work somewhat close by so am just going to take a long lunch break, but I can probably get there at 10 if I need to.

Dang, I was hoping that it would slow down some this week with school starting. How long did it take you to get food if you got there at 10:06?

The last poster that went acted like he got there at 10:15 and was eating pretty quickly.

Got there at 1020 and ordered at 1110 when i went a few weeks ago, which was fairly soon after the release of the list.

I wasn't in line, got a scouting report from a friend lol. BUT I got an email that the line was gone at 12:35 from Cattleack, so maybe tomorrow...
