I went to Reveille this morning as I had planned. I have to say it was excellent. I can't say it was better than Corkscrew, or Killen, or Feges, which I would say are the Top 3 in the Houston metro area, but I'd say it is definitely deserves consideration, and is easily 4th, with potential to move up.


I got there about 10:30, not knowing if there would be a line. I was there first one there by a good margin. Chatted with the mom of one of the owners a little bit. Nice lady.

After a bit but before they opened, one of the owners called me over to the window and gave me a little Barbecue "amuse bouche" from the chef.



Brisket chowder topped with bacon and Sriracha. This was pretty amazing. Never would have thought of doing this but it was delicious.

Since it was my first visit I wanted to try as much as I could, so I got four meats. Sausage, brisket, pork ribs, and pork belly.



They were all really good. The sausage was kind of crazy, they put beer and citra hops in it. You really taste the hops! No imagination needed to detect them. But it's not bitter at all. I love creative stuff like this.



The elote style corn was sweet and a little charred, really nice.



Brisket, ribs, and pork belly were all really well done.





If I had a "complaint" it would be that the rub on the ribs was straight up savory and I like them a little sweet. The sauce was fine but more tomato/vinegar than tomato/molasses or brown sugar. So it's kind of a personal preference thing.

Also, there were a lot of honey bees buzzing around. Much better than wasps as these guys are pretty harmless 99% of the time, but my wife would have been freaking out.



All in all, great stuff and I hope they have a ton of success.

Thanks! The mom even let me into the "pit room" and showed me their smoker. I don't pretend to be an expert in that area but I can say it had its own sort of beauty.

My company gives their employees Nov 6th off every year so they can vote. Me and my coworkers are going to vote early then use that Tuesday to hit up Franklin.

It'll be my 3rd visit. Can't wait to sit in a chair, drink beer for a few hours, then eat the best brisket on the planet.

In Magnolia. On 1774 about two miles north of where 249 splits into 1774 and 149. It's on the left.

Edit: I guess it's more like in between Pinehurst and Magnolia. Not quite to what I think of as Magnolia proper.

Went to the Frisco location of Hutchins BBQ this afternoon (around 2, so pretty late), but it was pretty solid overall. Moist was in point, not a ton of smokey flavor, but tasted really good. The jalapeo sausage really good, not insane spice level, but it was certainly present.

We took a Brit and when he took a bite of his lean he said "Now I can say that I've had real brisket! This is so much better than Dickey's!!"

Edit because there should probably be a few random "u"s and "e"s added in his quote.

I can't say enough good things about Reveille. Definitely one of the hidden gems of today's bbq scene

yeah, it's nice to have a high quality place that isn't well known yet, so for selfish reasons it would be nice if it stayed that way, but they definitely deserve that recognition.

maybe they can take some of the traffic from the busier places and make them a little less crazy?

I'm definitely a fan of Bodacious in Longview because they consistently turned out great food. Unfortunately I don't cover east Texas anymore!

Stanley's, Joseph's Riverport BBQ, Bodacious in Longview off Mobberly, then a distant 4th just because of the ribs would be Country Tavern near Kilgore is how I ranked all the places out East. The top 3 are pretty stinking good.

Boomtown BBQ in Kilgore is a cool place to stop although I don't really consider it bbq. Really nice guy that runs the place!

I stop at Joesph's in Jefferson every time I go or come back from Arkansas in visits. Really good BBQ
I think I will take a different way home to try the Longview place next time

Not so humble brag... We cooked our asses off this weekend for the Grand Opening of Brett's Backyard BBQ in Rockdale! Sold out at 3:30 on Saturday and 4:30 on Sunday!

Sunday was a "who's who in Texas BBQ" for the Grand Opening Party. Tootsie and the Snow's crew... Bryan from Bodacious... Scott from Tejas... And too many to count!

I feel your pain, I haven't lived in Texas in 11 years and I constantly miss it. Broke down an bought a smoker cause that's about the only way I can get decent bbq. I always make a point to find some whenever I'm back home. The struggle is real

We just got back to the hotel, and I feel like I ate way too much. Franklin was good as expected, but those Sam Jones whole hog sliders were probably my favorite part of the night.

I thought it was a cool event but not worth $130 per ticket. Expected something more intimate with a wider range of food. Also I know it's not totally fair to judge off tonight, but I really don't think Franklin is my number 1 in Texas anymore. I've had better brisket at multiple places multiple times this year than what I had tonight. I think Aaron doesn't really care about cooking anymore and has just completely handed it off to others

There were several top ten pit masters there, and they were all pretty open to talk. I spent a good five minutes talking with Aaron on where to source a fresh turkey breast and another five minutes shooting the **** with Kerry Bexley. I get that it was a lot of money, but you don't get to sit and chat with those guys while they're cooking.

It was good seeing you, JH. I'm glad you're up and walking again.

As far as value, it's all subjective but anytime time you can get all you can eat Franklin (and others) and drink for $100, it ain't bad...it's just a shame I don't drink! I do wish Franklin had offered more than brisket and sausage (like the May Pot Luck event where he had ribs and turkey).

Speaking if what was served:
Franklin: brisket and sausage
Leroy and Lewis: smoked beef cheek
Sam Jones: smoked whole hog sandwiches
Cracklings B's: ribs
Macaron station (apple caramel, pecan pie, pumpkin spice)
Pie station: apple, pumpkin, pecan

Before we walked in, I talked to Russell Roegel from Roegels BBQ here in Houston. I've known him for a long time so it was good to catch up. He's doing a smoked Cuban sandwich at his restaurant on Tuesday. I may have to go check it out (I love a good Cuban).


I talked to Aaron very briefly about his personal backyard smoker project. He said it's moving along, that they are almost done with the production building in south Austin and he should have the first prototype done next week. He said there are 53,000 people on the list. Surely not all will but but if they did...wow. I did the math based on a $2k smoker (I figure they will go for $2000-$2500).

53,000 x $2000 = $106,000,000
Even if just 10% bought: $10.6mm...not a bad side business.

All in all, a good night. Perfect weather, good people, good food. I can't wait for the next one.

I hit every tent twice. Sam Jones was simple, but perfect. Vinegar sauce was delicious. Cracklin' B's rice & "hash" was a first. So good. I go to L&L often and I love his stuff. Pork skin "noodles" in broth was very interesting. Wish Franklin would have done a different meat besides sausage. Was not disappointed in the price point for event, just wish I got my hands on a beef rib!
