No. It's all about how it looks in a stupid styrofoam container. I respect the hell out of the competition guys and the work they put in but I would never base whether a brisket is good or not by the prettiest cut of the flat with a perfect smoke ring...RK said:

I make a pretty good comp brisket, but like others said, it's a salt bomb. Reason is brisket is the last meat judged and most of the judges have been drinking beer all day. You need the salt.RK said:

Ended at Bodacious in Longview for lunch. Lean and moist, house sausage, baby backs, turkey and pork steaks. The brisket was spot on. Perfectly cooked with nice bark. The ribs were a little sweet for me but they were tasty. The pork steak was the star. That was outstanding.
Edit: wait was all of 15 minutes at 12:15. They said normally it's close to an hour.
