First article on Franklin's new steak book


While the Tales from the Pits bbq podcast guys were wrong about Aaron quitting bbq or selling out, they were right about his collaboration on another book cooking steaks. Vaughn just released an article on it detailing some of what it will cover and how it came about.

If it's as good and in depth as his bbq book, I'm in and will likely buy it.

Seems this is a common occurrence lately, every other report back on here seems to have a negative review.

And when Allison Cook released her top 100 Houston restaurants they didn't make the list this year.

The Pit Room group also just announced they were buying a seafood, Pizza, and Fried Chicken restaurants.

She left them out last year too. I love the setup and the food though so I will continue to be a regular customer. Their brisket started out really good and then a few times was just okay and lately it has been really good again (they lost their pitmaster to Franklin with his Loro project in Austin).

From what I have heard it had little to do with the Pitmaster, more to do with switching to Brisket being available at all hours open. Which has led to a lot "reheats"

my pork ribs kick Franklin's ass.....trophies cans attest.

Brisket? King has my ass. He buys better meat. And that's not a complaint.....he prolly could outcook me with the same brisket. Just a competition thing. He doesn't cook competition for a reason. I respect that.

No. It's all about how it looks in a stupid styrofoam container. I respect the hell out of the competition guys and the work they put in but I would never base whether a brisket is good or not by the prettiest cut of the flat with a perfect smoke ring...

I make a pretty good comp brisket, but like others said, it's a salt bomb. Reason is brisket is the last meat judged and most of the judges have been drinking beer all day. You need the salt.

I know every time I've turned in great brisket in a cook off it won't even place, but turn in average salty brisket and places high, and have even had a few 1st places.

Competitions are just funny, it could be the best bbq ever cooked, but if it isn't the way the judge likes it, you are screwed.

Truth bbq on point as usual today. Fairly short line, I got there at about 12:30 and was eating within 10 minutes. Their brisket still ranks right up there with Franklin and Snows for me.

I agree about the Flores recommendation. I'm planning on going up there tomorrow.

Anyone have any idea when truth is going to open up in Houston. I live right between Truth & Pit Room so will have a hard choice to make when I want to get my bbq fix.

That's not a hard choice at all IMO and I like Pit Room. Truth is much better.

Terry Black's for lunch yesterday. Their bbq is always so rich it's hard to finish. I shouldn't have ordered the jalapeo cheese sausage, but everything is so good it's hard to willingly leave one out. Plus their peach cobbler is the best I've had. Even better than LM.

You don't hear much about Terry blacks when people talk about good bbq but I really like it. Their brisket is consistently good and their turkey is some of the best I've ever had...and I'm not a turkey guy.

Terry Black's isn't the best in Austin, but they (and Stiles Switch) put out consistently great barbecue for lunch and dinner. It's probably the best wait:quality ratio in town.

Ended at Bodacious in Longview for lunch. Lean and moist, house sausage, baby backs, turkey and pork steaks. The brisket was spot on. Perfectly cooked with nice bark. The ribs were a little sweet for me but they were tasty. The pork steak was the star. That was outstanding.

Edit: wait was all of 15 minutes at 12:15. They said normally it's close to an hour.

The wait is usually an hour because they are slower than molasses.
