As a Beaumont native (now living in Waco...lol) I've always said Beaumont is the ******* of Texas. Waco is just the hairy mole.

Live in McKinney and will put Hutchins up against most places. They just expanded their seating area of their McKInney location. Still a line most dinners but not as bad as it used to be. Went with the wife and in laws on a random Tuesday or Wednesday at 545 and walked right in . Love be the fact that they do $20 all you can eat. Best bang for buck and allows you to try a bit of everything if it's your first time

Went to Freedmans today and wasn't impressed at all. Brisket seemed over cooked.

That's disappointing. It's been a while but I've always thought highly of Freedmans.

Their former pitmaster left and opened his own spot (LeRoy & Lewis) about a year & a half ago. That probably has something to do with it.

Oh the drinks were definitely nice the last time I was there too, but they didn't make the Texas monthly top 50 bars....

CDub, been to Pustka Family BBQ in Hutto yet? It's AustinAgChef's place. Good stuff. I am a little biased because owner is my wife's cousin but I thought it was good.

Aaron Franklin says he doesn't eat brisket anymore.

Thoughts? Article is a little misleading, he does say he'll still have bites sometimes. I thought it was interesting either way.

He said the same thing in an article a few years ago. I know even when I cook all day Brisket can almost be too much by the time it's done. Cant imagine cooking thousands of pounds of anything and eating it all the time. It would be kind of sad to not eat what you cook though...

Saw this pic from Truth's Instagram. When they're on, they're on. Right up with Franklin and Snows IMO. Hoping I can get down there in the next month or so and it will be a day that the main guy is in doing the smoking.

OH! I had a little jaunt through East Texas.

Knocked Bodacious Hallsville off of my to do list. Got there around 7PM and found some pretty good barbecue (especially considering the time and region).

Ribs were the high point. They were lightly glazed, which gave it a bit of a crunch, but they were surprisingly not sweet. It was a nice texture, moist - a bit of heat. Really well done.

The Rib Tips were a bit too dry and didn't have much smoke on them. The brisket also didn't have much smoke, but the texture was spot on. Sausage and pulled pork were good, but not really notable. Overall, it was about a B grade for me. Well worth a stop, it's not Bodacious Mobberly, but it beats all the other Bodacious locations.

I saw the pitmaster in the back and we made eye contact, but I didn't get a chance to talk to him. He later tweeted me.





I stopped at Chuck's Country Smokehouse in Gary City (near Carthage) for lunch at about 11AM. Really off the beaten path location.

The ribs won the day again. They were solid, straightforward ribs. These weren't big meaty ribs and I wished I'd ordered more.

Brisket was disappointing. Crust was inconsistent and grainy and the flecks of black pepper really provided the only flavor on the meat. The pulled pork was awful. Crust reeked of bad smoke. The Boudin was another high point. The sides were straight out of the tub. Marked it off my list and don't have to go back. But if I end up there, it'll be ribs for me.

Micklethwait making the TM Top 10 will never make sense to me. I've never been that impressed when I've been there and I've never seen a picture that looked jaw-droppingly good.

Don't know how it made it in the Top 10 over places like La BBQ and Killen's.

Man I hate hearing stuff like this because the few times I went (haven't gone since 2015) they were awesome. Slow but great food. That picture though is some terrible looking brisket and blows my mind that they would use that as their marketing for the day. Makes me wonder if owner is trying to do something on the side and let someone else run the trailer while he's doing that.

I've been a few times and it was only really good once. La BBQ deserved top 10 way before them imo.

I've loved Mickelthwait each time I've gone. They do tend to serve fattier brisket than most. I've never been to La BBQ because the wait is too damn long.

I went to Cattleack in Dallas today for the second time, although first since they were named #3 by TM. We arrived at 10:30 and sat down with our food at 11:35. Was very disappointed in the food this time. Unfortunately this reminded me a lot of Pecan Lodge...named top 5 by TM and then quality went to crap. I hope I'm wrong, but it was not good today.



Brisket (moist): Unfortunately you can't see it because owner put two pieces of lean on top because "he doesn't like it". Well, I didn't either because you burned the **** out of it. I'll just say the moist that I ordered wasn't moist which is hard to do with the point of a brisket.

Pastrami: Why half ass it? If you're going to do it then do it well. Dry and didn't have good flavor. This is to Texas BBQ what the beef rib was 10 years ago. Annoying.

Pulled Pork: I thought C-dub said it was great here but I must have gotten this mixed up with Snows maybe? What I cook at home is far better than this. No flavor, although when he puts it in the plate he pours some juice on top of it...doesn't have much flavor so it might just be the drippings. Pretty hard to dry out a really fatty piece of pork but they did. Anyway, not very good.

Ribs: Excellent. Wish they would trim the rib joints, but I get that they want to get paid for all the rib so they leave it.

Corn: Awesome

Mac & Cheese: So-so. Not much flavor and was dried up.

Dang. Disappointing. Those ribs look pretty though.

I have the pulled pork from my visit as a B.

It's probably Corkscrew you're thinking of. I'll heap praises on that pork all day.

Anyone been to the new bbq (and brewery) joint in marathon? I'm planning a trip next month and am anxious to try them out.

Just googled Marathon...that's a long ass way away from anything!

On a side note, Daniel Vaughn went to AustinAgChef's place in Hutto yesterday and although he butchered the hell out of the name of the place, he seemed to have liked it.

Yeah, I spend a week or so each year in Alpine for work. That whole region is a great & unique corner of Texas. I love it. Tons of good food too. (Though bbq... not so much).

Have you been to the Bodacious on Mobberly? Their brisket is pretty darn good. The Bodacious in Marshall has excellent ribs. Better than Stanley's or Country Tavern in my opinion.

I thought the Bodacious on Mobberly was good but not quite top 10 in Texas good. I love Stanley's and the Tavern so I'll have to check out the Bodacious in Marshall now.
