Like cdub said, it's not a step up, it's a whole different staircase. I enjoy old Smolik's but this is something completely different.

Thanks - will be recommending Kerlin.
Just my opinion, but...Kerlin's pork ribs are awesome. everything else was pretty standard.

I still like La BBQ and Mickelthwait for non-franklins options.

I stopped in at Harris BBQ in Waxahachie on Wednesday and I was pretty impressed. His brisket was not great but it was pretty darn good. I could tell he wraps the briskets based on the bark, which I don't wrap my own for that reason, but there was definitely a good smoky flavor in the meat. Kelvin Harris is a really nice guy and I got to chat with him for awhile. I'll add this to my list of BBQ places I keep in mind while driving around!

I forgot to take pics of the meat because I was in a bit of a hurry but I did take pics of one of the briskets I personally smoked that night for lunch on Thursday. These mofos were pretty good:

Headed to Roegels BBQ, The Pit Room and Tejas Chocolate & Barbecue before we leave the Houston Steer auction sale and head back home

This is my own cook but it's heavily influenced by what quite a few top 50 joints have been doing lately. Pastrami cured for two weeks. Come out incredible. I had to reschedule my latest Texas trip but will have more time to hit all the H-town top 50 as well as Snow's, Truth and a couple spots in ATX.

If I get into Houston at 4:30 will Killens be sold out of a lot of things or do they stay stocked up with their new hours? Hoping to hit Killens and Roegels or Pinkertons. Thanks!

What part of Houston will you be getting to at 4:30? None of those places are close to each other, and Killens is all the way down in Pearland

Flying into Hobby. Looks like Killens is actually the closest place. I'm not really worried about convenience. Trying to hit all the top 50 In Houston.

You'd probably have better luck heading to the Pit Room after Killen's unless you've already had it.

This. Plus Pit Room is a lot better than Pinkertons IMO

Not yet but Patrick is my favorite pitmaster in Houston. I can't wait to see what they're doing out there.

Trying to hit the 7 top 50 in Houston plus truth wed-fri and then a few more Monday. I think Pit room I was going to try to hit Monday after Feges. It's on the way to Hobby.

Right now I think

Wed Killens and Another one that's open late ie Pinkertons /Pit room

Thurs Tejas and Two more

Friday Corkscrew and Truth

Monday Feges Pit room

Saturday and Sunday heading to Snow's and Austin to a few places I haven't been Black Box, Leroy and Lewis some others that look good but aren't in the top 50.

I have the top 10 places prioritized but figured I'd hit the others and at least try a few bites while I'm there. It's tough figuring out the timing though.

Hit Feges for an early lunch today. Brisket and ribs were both pretty good, with the ribs being very very good. It's a little bit of a pain to get to since it is in the Greenway food court, but it's worth it

Sorry, no pics! Unless you get a plate(1 meat + sides, etc) they pile it all in a styrofoam go box, so pics wouldn't have been that great anyway.

Looking at hitting Truth BBQ on Saturday. Any tips on when we should plan to get in line?

I'd get to Truth about 10:30 for minimal line. Great BBQ and sideswell worth top ten rating.

Harris is definitely worth the stop if you're looking for lunch on that side of Dallas or live around there.

1030 latest id say. My favorite there is beef rib and fatty brisket. Pork rib ain't too bad too! Mac n cheese is the best side IMO. They are good people there at Truth!

Valentinas is better imo. I went real early for the breakfast tacos and they had no line. Micklthewait hasn't had a super long line when I've gone but it does move a little slow. They're worth trying but Id go to Valentinas first.

Best breakfast tacos in Greater Austin and it's not debatable.

For real. I ate at like 6 of the top 10 on my last trip and their Real Deal Holyfield and brisket taco were near the top for best bites on the trip.

I liked Valentina's more and it was a much quicker process.

Valentina's it is... should I expect a line if I show up at 8am? I assume they serve their lunch tacos and meat by the pound in the mornings as well?

I live in Pearland and Ive always enjoyed Killens, but I've decided to venture out and try a few others as of late.

My favorite brisket is now the Pit Room. Plus the variety of sausage and the bourbon sauce appeals to me.

I was pretty disappointed in Pinkertons. Everyone was so nice and pleasant, however the brisket was pretty dry and had quite a bit of fat on it. The pork ribs were decent.

EDIT: Thinking of trying Tejas in Tomball next.

Speaking of Tejas - We took the little one out on her first barbecue outing last weekend. She wasn't as enthused as I was. We visited Tejas and honestly, I think every single meat was the best they've ever done. Tejas is always excellent, but last Saturday was a whole other level of A+ brilliance.

Had Drew's BBQ yesterday (long line at Pit Room so walked over there to try it).

Rib plate w/2 sides + drink for $10 was the special yesterday so did that.

Ribs were fantastic (although only gave you 3 but had a good amount of meat that fell off the bone).

Sides were subpar.

I would not expect a line that early.
