It's amazing this thing has gotten so popular that you may have to pay $75 a year for 5 years in order to pay $500 to learn to cook brisket.

Hey, it's not for everyone, no doubt about that. But don't be judging us too hard now.

I think I already cook a pretty decent brisket. In fact, it's probably the best bbq meat I do out of all of them to tell you the truth. But to be able to interact on a personal level with famous pitmasters from around the state and experiment with stuff that logistically I'd never be able to on my own, is well worth the price of admission to me (and a growing number of people, according to their email).

I'm also fortunate in that I live in the area so I don't have to add travel or hotel costs on top of that.

Went to Gatlin's today for lunch. I'd say it was good, but definitely in the second tier of quality in town. The prices are more reasonable, though.

Yeah, I didn't think anyone went to Camp Brisket to actually learn how to smoke meat. Hell, you can do that on YouTube in an hour. Everyone I was there with went to talk and eat meat for two solid days with no other responsibilities in life. One guy even went to Snow's on Saturday morning and then came back but that was Daniel Vaughn so I don't think he missed too much.

You can do that in your garage if you have enough beer.

Except for the kids part. I have two under two and me going into the garage does not equal peace. I have to go to a different county.

Sometimes I miss the days when my now 16- and 13-year old boys were little. But then I have a beer in peace and forget about it.

Ha. Yeah I'm sure I'll miss some parts of "now" when they're older but they're 14 months and 1 day apart. It's an absolute **** show at my house right now.

Headed to 2M this Saturday. What is the line usually like on weekends? Is it as bad as Franklin or La Barbecue? I've got a 6 month old, so waiting in line for hours really isn't ideal.

See you there! It's been a year since I went so unsure how the line has been on Saturdays. My group is trying to get there between 10 and 10:15.

Had Hutchins turkey for lunch today. Man that is damn good. Obviously not as good as brisket.
Also had the brisket Jalepeno popper. Meh. Too much cream cheese. Still pretty good though.

I might actually be at Truth Sunday.

Went to Jackson Street for lunch today. Brisket is still pretty good - though pretty heavy handed on the salt, but the other meats have taken a step back in the last year or so. Still a pretty meal when downtown.

Hit up 2M with some friends today for the first time (but not RAM700ba cause he's a bad friend who backed out).

San Antonio has a legit bbq spot, everything was amazing: brisket, ribs, turkey, sausage, and the different sides we had.

I think Truth, Franklin, & Snows have slightly, very slightly better brisket, ribs were really sweet like something from Terry Blacks, very good. Overall I'd probably have it in my personal top 10-15.

Unfortunately we aren't going to Truth after all. We were going before a wedding tonight, but it seems some of the other guys in the wedding party had a long night last night.

I'm a fan of Jackson St. it's not upper tier bbq, but it's consistently good, I have a job site in Eado so been hitting it up.

Anyone had Bucks BBQ that is selling out of Luckys? Going to try them for lunch sometime this week.

Had Pinkertons for lunch on Friday. Brisket, pork ribs and a beef rib. It was a really good, and a lot better than the first time I went there, which was unimpressive, but still nothing extraordinary.

Jackson St. is convenient to grab something before watching the Astros - though it is often pretty packed pre-game.

I tried Pinkertons once and was pretty unimpressed. I may have to give them another shot.

Went to Hutchin's in McKinney today and was very disappointed. Hadsbeen awesome the other few times I've been but today I went around 1PM and got the brisket/ribs plate. It was $16 and I got 3 spare ribs and 1 slice of moist brisket, two sides and a drive for another $2.25 or so...all in for slightly above-average BBQ it was $19 for me.

Ribs were cooked perfectly but had a plastic/rubbery flavor to them like something may have been dropped in the fire. I was a pretty gross flavor. Brisket had great flavor but was overcooked. Mac & Cheese was pretty good as weere the beans that had brisket in them. Didn't try the "free" (is it really free when you're charging $20 per person...) desserts because I already felt like a fat ass eating the other stuff.
