Here's a question, is anyone in TX doing a brisket grilled cheese? There's a brewery in Colorado Springs that makes a phenomenal brisket grilled cheese sandwich with pickled onions and gruyere. I think something similar would be a hit in TX.

  • Smoke Session BBQ in Royse City

Smoke is legit, but they just had to move across town. Luckily they are a trailer setup and can move easily.

Only bad brisket needs to be slathered with onions and cheese. You can take brisket outside of Texas, but most all screw it up. Heck, there are tons of so-called bbq joints in Texas that can't do brisket worth a flip and have to rely on chicken, sausage and ribs...

Nice.

I'll have to try it out when I'm back down to visit my folks.

Just found out that it's my 2nd cousin, who I haven't seen in about 20 years, that runs it. I need to make it out there sometime this summer.

One90 Smoked Meats in Lake Highlands does a good brisket grilled cheese. They actually have a ton of good sammiches that I enjoy.

Very few Great briskets being served. And when it's great, I prefer mine straight on the fork...

Went to Rays BBQ Shack off OST in Houston yesterday for lunch because I'd always heard good things. Really impressed. Had their pork ribs because I'd heard that was their best item and they didnt disappoint. Great sausage too. Spicy rice and deep fried corn on the cob as sides.

Honestly better than a handful of the TM Top 50 places we've been so far like Fargo, Gatlins, and 2M

I would agree with this, although my preference is eating it sliced with no sauce. There's nothing wrong with being creative with it.

Hell im probably going to try to make a grilled cheese with the next brisket I smoke.

There's a place in wimberly that has done it and a few of my friends told me it was really good. I wouldn't call my friends BbQ people at all but they said the brisket grilled cheese was really good.

The Back Porch in Wimberly is where they had it.

Wait, is their Houston location open? Cause if you're talking about the Brenham location you won't have much of a line to wait in....they're only open Friday-Sunday.

Brotherton's does a brisket grilled cheese. Also a Reuben grilled cheese with their pastrami they make themselves.

I really like Brotherton's for a quick lunch when I just want a sandwich. Their meat by the pound isn't anything special, but their sandwiches are great.

Regular Reuben

I finally made it by Louie Mueller's in Taylor today for lunch. We arrived right at 11:00 when they opened and waited about 15 minutes in line. The food was all incredible - the brisket, sausage and turkey were all amazing and sides were great too. If there is better BBQ in the state, it must be smoked by the Good Lord himself.

Aaron Franklin is flattered, but could never compare himself to the Good Lord.

Didn't even know they served sausage or turkey. Brisket isn't even on same playing field as franklins/snows. They have good atmosphere though...eerily similar to Kruez.

This may be the third time I've said this on this thread but Louis Mueller beef rib is the best bite I've ever had.

You didn't know a famous bbq location that you've visited before serves sausage? Strong claim.

While I think LM is incredibly over rated, if I'm going to eat brisket on a stick it will be here. They do that well for sure.

Dinner (well, part of the dinner, didn't get pics of the rest) at Franklin last night for the Hot Luck kickoff party. They also had beef ribs, whole hog by Sam Jones, smoked lamb by Hometown BBQ out of Brooklyn, and ice cream.

No, LM brisket isn't on Franklin/snows level but who is? Still damn good brisket for not having to deal with crowds.

LM is one of the few legends that has maintained its posture.

15-20 years ago we talked about Smittys, LM, Coopers, and Luling City Market.

While LM does not have the consistency of Franklins (who does?) it can still be elite.

I will say that when they are on, LM is just as good as any place around. But it just is not always on.

But it's a great venue. Simply amazing location. Tons of history. And usually really good BBQ which is sometimes elite.

IMO, Rays pork ribs are better than any that I've had at any of the top BBQ places. I'm still looking for a place that has better pork ribs than them and I just haven't found it.
