The width of the ski has no impact on the functionality of the binding. NONE. You want the bindings to be no bigger than 5-7mm outside your edge/sidewall.
For instance you wouldn't put a B115 on a 90-95 waist as you'd have a fat amount of brake pushing off the sidewall. You also wouldn't be able to put a B95 on a 105-110 waist.
My personal preference on bindings is
Look Pivots, Tyrolia Attack, and Marker Griffon are the best all things equal and considered.
Pivots are built much sturdier for the DIN rating but weight considerably more. The Pivot's allow you to pivot the back heel because of the rotating heel piece but that can create issues w ease of getting into and out of the ski.
The attacks and griffons are a more versatile and lighter alternative.
Now between the Griffon and the Attacks, the Griffon offers better power transmission, energy absorbtion, and vertical heel elasticity and have a reputation for more durable construction.

Marker Griffon 13 - Rec weight range is 80 - 265 lbs
Look Pivot 14 rec weight range is 160 - 220 lbs
Tyrolia Attack 13 weight range is 65 - 240 lbs
Since I how you're a BIG guy, I think they did a great job of putting you into the 13 Griffons vs pushing you into the Tyrolia or upselling you into the Look Pivot 15s which is where you'd need to be on that manufacturer for me to feel comfortable w you riding them given your height and weight. Still confused about the width of the ski comment though jaja.

You should get the base structured once you receive them. Structure is like the tread on your tires. You don't want to drive on bald treads and same goes w skiing. You want some structure to break up the suction of the water to your base PTEX. Personally, I can't ski factory structure.
A more aggressive structure has more depth/width.
A shallower, tighter structure is less aggressive.
Coarser structures are harder to turn because they make the ski want to track more.
Cold/Dry Conditions: Use a fine structure that you can see but not feel with your fingers. This helps hold water under the ski for better glide.
Warm/Wet Conditions: A coarser structure that you can feel under your fingers works best here because it helps move water away from the base and reduces suction.
If your kids race, one thing to remember is chemically treated courses often ski drier/harder than the ambient temp.
