Hmm.... I didn't know trichinella was that prevalent down there. It seems like that would have been mentioned by now, with multiple contestants actively trying to obtain a boar. It also seems like if it was that prevalent it would likely be in the foxes that they keep trying to get.
It was interesting that they nobody mentioned anything about the hanta virus early on though, so maybe they are saving that little gem until someone actually gets a piggie.
I just checked the CDC website, and it mentioned that a lot of the trichinosis in recent years was from homeade jerky, so I guess drying and salting wouldn't be enough. However, if you could adequately dry it, and store it in its own rendered fat, it would seem that you could still thoroughly cook it at a later date and kill off the parasites. Even with the pemmican I make, generally if its over a year old I'll cook it in a skillet or something before I eat it. May not be necessary, but its better safe than sorry, and it goes great with scrambled eggs.
