yeh that was the only thing that was screaming to me to alter from recipe on first post... this needs meat (aside from small bits of bacon), to make it a meal.

Otherwise, it could be good to eat with tortilla chips kinda like charro beans

Wife and I also use this recipe and substitute blackeyed peas on Jan 1st each year. Sometimes half pintos, sometimes all BEPs. Either way it works just as well and tastes even better as leftovers a day or two later.

Sorry to hear that, B-1. Remember all the joy you have brought the many, many people that have enjoyed your recipe. We went from Clamato to V8 about 10 years ago to avoid issues with shellfish allergies.

16+ years for this thread and still going strong. No need to ask for forgiveness but I hope you enjoy a modification of The B-1 83 Beans (as we know them in the house).

Made these for Christmas Eve to go with our tamales. Family raved. Pot was emptied. After I shared the recipe with my father-in-law, he couldn't believe this recipe was so quick, easy, and delicious.

I'm not exaggerating in the slightest when I say that these are some great beans and I have made them dozens of times.

They good. They spicey. They easy to make.

Be warned. If served in close quarters (low ceiling, improper airflow), you may be fumigated out of the room upon digestion.

My 4th batch this year.
Slight mods,
53oz pintos
Add 2 regular sized cans of black beans
Instead of tomatoes
2 regular sized cans of fire roasted tomatoes
A can or 2 of hatch chilies
16oz can of spicy V8

Then throw on the smoker in a cast iron pot next to the brisket. Stir every 45 mins.

Supper Wednesday night was beans from crockpot, fresh tomatoes and onion, fried okra- with the cornmeal falling off, no breading, and cornbread made from stoneground meal we get from Henderson. No meat. Ice cold watermelon for dessert.
Her beans are pretty simple, diced onion, can of rotel, garlic and chili powder, salt to taste. Turn it on and go to work !
Ate so many beans growing up , there was period of time I skipped them if served. Now I can make a meal of them!
We four brothers at one time shared a bedroom. After a meal of beans Dad said it sounded like we were answering each other from the different beds!

It's been about 12 years since the first time I made these for my wife's extended family, and her aunt requested the recipe. Found out recently that she has made a big pot once a month for my wife's uncle. He eats a bowl when she makes it and then freezes the rest. He's eaten it every single weekend for 12 years outside of times they have traveled.

I posted numerous pages back that I make it with hatch green chili sausage instead of bacon, and I add diced potatoes with about 20 minutes left to simmer. If y'all haven't tried it with potatoes then you're missing out.
