Big fan of Chef John. Funny thing is the first time I watched one of his videos, I commented that he has a soothing voice. Multiple people replied saying his voice is the one thing they dislike about him. Oh well.

Chicken breast with Spanish seasoning (paprika, garlic, cumin, coriander, and oregano) and salsa brava, and Catalan-style eggplant, onion, peppers, and tomatoes. The wine in the background is my cheap white I buy by the case for the summer.

I brined the chicken overnight in salt, sugar, peppercorns and herbs (thyme, sage, rosemary)

Make a paste of achiote powder, lime juice, thyme, salt, pepper, oregano, cumin, brown sugar, garlic and ginger. I eye-balled it, but probably 2 tablespoons of achiote, 4 limes, tablespoon of brown sugar, tablespoon of minced garlic and teaspoons of the rest.

Rubbed paste all over chicken and in the fridge for about 4 hours

Seared chicken in large pan and removed to big paella pan

Picked up all the fond with one large onion chopped into 1/8ths, then liquid and leftover paste from marinating bowl and one can crushed tomatoes

Cooked that for about ten minutes, then poured over and around the chicken. Added more thyme and cilantro.

Baked covered with foil at 400 for about an hour, then uncovered for 15 minutes or so.

I probably could have browned the chicken more at the beginning, but I was in a hurry to get it going. I also way overestimated the amount of chicken that I brined, so it was a tight fit and made for a precarious removal from the oven with the juice almost running over.

Agree with the potential. But my daughter requested chicken parm. I've already picked a giant bunch of basil from the garden and made some pesto. About to make a dough for garlic bread unless I get side-tracked with honey-do's.

I make a ton of sausages and save recipes that I want to try. I've made chorizo before, but I have this one saved to try next. Have not beef, nor would I want to with the prices of beef what they are.

From Joy of Cooking:

1.5 lbs of pork shoulder
8 ounces leaf lard or pork fatback
3 T New Mexico, guajillo, or anche chile powder (or combination of all three)
4 garlic cloves, minced
2 T cider vinegar
1 T dried oregano
2 tsp salt
1/2 tsp ground cumin
1/2 tsp ground allspice
1/4 tsp ground cloves

Grind chilled meat with a food processor or meat grinder. If using grinder, mix meat with seasonings before grinding; if using food processor, mix it after.

Fry a small patty of seasoned mixture in a patty in a skillet to test for seasoning, and adjust as needed.

If you don't want to watch the video, use the chile adobo recipe, and add 1.25 cups of that to 1.5 pounds of ground pork, along with 1/4 cup paprika and 1/2 teaspoon salt.
I wouldn't use beef to make chorizo unless you're trimming briskets and have the trimmings to use.

I've made this Hank Shaw chorizo many times, with pork and venison (using pork fat).

Currently smoking some corned elk roasts for later use. Also Hank Shaw recipe. My favorite way to use it is to dice it and make a hash with sweet potatoes, onion, bell pepper, and garlic. Dice it all, precook the potatoes in the oven, then sear it together on a flat top. Add the potatoes when the rest is cooked, top with a sunny side up egg.
