Cold fried chicken. Hell, it's my preferred way to enjoy fried chicken to be honest - and one of the best breakfasts there is

Fried bolognia sandwiches. Real beef bolognia, fried on a skillet - thin cut, multiple pieces. Cheese, mayo and white bread.

Eggs & Rice - scrambled eggs with leftover rice from last night's dinner for breakfast. A touch of salt and pepper

Grits - especially cheese grits. Breakfast, dinner - doesn't matter.

Roast over rice - especially on a winter day when it's cold out. Easy to make, tastes great, even better the second day

Ritz crackers, cheese and summer sausage - I can just about eat my weight on a summer day wit this.

Guilty pleasure - cheese in a can and Ritz crackers. I'm a sucker for that combo and always will be. Extra sharp cheddar flavor is my favorite.

Cheap off brand vanilla cookies (oreo type, but vanilla with vanilla filling)- let them sit overnight where they are a bit stale instead of crunchy, a glass of milk and I'm usually suffering later. But in a good way.

Old fashioned chocolate malt on a summer day.

Plain jane Kraft mac & cheese - goes with anything, and sometimes it makes the meal.

Laura Scudder's peanut butter and raw clover honey mixed up on a plate with saltine crackers to spread it on. Wash it down with a glass of milk that is packed with crushed ice.

I do this with salami. I'll usually cut the whole dang log and block of smoked cheddar before I quit. A dab of Woeber's Sweet & Spicy Mustard or Mister Mustard Original Hot. I call it "Scooby Snacks" and I will eat it for dinner.

Which closely resembles another "meal" - a ring of grilled sausage cut into slices, a block of cheese cut into cubes, a ramekin of BBQ sauce and another of spicy mustard, and toothpicks. Lately I've been dusting the whole mix with a spicy dry rub, a la Rendesvouz in Memphis.

To make this thread related, I might have awoken tonight for a 3 am snack involving cheap ramen, an egg and rooster sauce. Covered in a slice of American cheese. I know I know. High end. Authentic. Healthy.

I am none of these.

Two of my favorites:

Bacon Sandwich: 2 pieces of toast. Fry an abundance of thick cut bacon. Mayo both pieces of toast and load it up with bacon.

Radish Sandwich: 2 pieces of wheat bread. Butter both pieces with salted butter or country crock. Slice radishes thin, place in sandwich and sprinkle table salt on them.

Love bruschetta too, usually start with good intentions, but get lazy somewhere between slicing the tomato and toasting the bread, and end up just hitting the mater with olive oil and s&p and going to town.

Later in the day after a big breakfast was cooked, walking by the stove or counter where the left over scrambled eggs, biscuits and bacon are sitting! I love making a cold biscuit sandwich w those left overs.

It's flipping amazing...I've tried it with scrambled eggs instead of fried and sausage instead of bacon; it's not the same. Fried eggs and bacon for the win.

One of my favorite simple things is a variation of the sandwich you and Don Cecilio are referencing. I scramble eggs with ham, and mix in a spoon full of Durkees after they are done and melt cheese on the toast or bread. It is an incredible simple breakfast that is very tasty.

I do it with leftover pork shoulder, fried up for some crispy edges in some oil. I don't bother with toast - I put in in a bowl, cover with cheese and top with fried eggs and hot sauce.
