The way I handle the camp/dispatches is to make sure I have security escort dispatches out all the time. I make sure I have provisions coming in and stone and timber coming in. It starts off kind of slow. But I got them up and running as soon as I had enough gathered from the rumor missions.
At some point you get "Contribution Workers" in Hernand, these are Greymanes that go with your named Greymanes and add work force #'s. So you can send one of your named guys and say 5 contribution workers on a dispatch and that mission runs.
I only do the trade wagon to the Goldleaf camp that is on the highland area with the GM Camp. I have dispatches out that get me silk and pelt. When I have a good amount of them, I run a load down there. It is quick and makes a good amount for the camp. I probably only do this every week or so in game time. So it is not very often.
The main thing is to be getting your money provisions etc from dispatches. That is what really pumps up those numbers and sets you up for later. Once it is running it is not very intensive except when you have to fiddle with it to fulfill a request like building a statue or some such.
ETA: Also the farm and ranch keep me with enough food for my character. But that is not necessary if it is too much grind as you can buy meals from your camp cook. (He can make any meals from the pubs that you have the goods and service contracts with.)
