I bet we get a mysterious visitor to Celebrimbor to show him how to "save the elves" by using mythril to forge the elven rings of power. Which is a shame. I think the constant "mystique" of who is or is not Sauron really detracts from the story, but that is my opinion.
I do think they are playing a bit on the existing knowledge that Sauron has an alternate form. If that knowledge didn't exist, the way this show is written, I think we'd just be waiting to see the big bad. So in that sense, I agree with your opinion that who Sauron is or not is not helping the show. I think Sauron needs to show up and be seen influencing things.
From there I wouldn't mind it playing out in one of two ways:
1) Treat Sauron as essentially a Thanos type character where the audience knows who his alternate form is and knows how Sauron is influencing things.
2) Keep Sauron's alternate form a mystery for the audience to figure out. As long as Sauron is out in the open and we get to see his actual form influencing bits, I don't mind the mystery of trying to decipher who his alternate form is.
