How does a mechanical watch know to catch up if it's not tied back to some other source like a digital watch?
The watch mechanically falls behind by 8-12 seconds per day if it's not worn but it will get ahead by a few seconds per day when it's being worn (and moved around).

So it runs slow when not being moved and runs fast when it's being moved.
So if you wear it a lot then it's always going to be too fast and you are living in the future.
How much wine have you had.

Critique my logic though.

That's a fantastic deal. I just like the face of the 300 more than the 600. I think it looks too cluttered with "Christopher Ward" on it instead of the logo.
