It depends on how fresh they are. If I'm stuck with store bought tortillas, I don't care what the filling is, I'm not using corn tortillas. They are cardboard. Homemade corn tortillas are awesome though.

Big greasy plate of cheese enchiladas. If I want to splurge, I go for beef faijtas. Occasionally I'll go for tacos al carbon or chile rellano.

Corn tortillas or some combination of corn tortilla are an absolute must.

Chile relleno is a great barometer of how top notch a place is. Good salsa is obviously a prerequisite.

That being said, my normal order is enchiladas.

Since the Mexican food is so ****ing bad out here in Southern Oregon, I normally order fajitas to see how it is. If they make an edible plate of fajitas, I'll try the enchiladas. If those are any good, I'll try out the chili rellano.

Seriously, I've gotten fajitas that were obviously marinated in soy sauce out here. I definitely miss being able to stop in any hole in the wall Mexican place and being able to find something good

I'm genuinely confused by this post. Chilaquiles are chips cooked in a red salsa or salsa verde and sprinkled with Queso fresco. If they're topped with an egg it's usually fried. Green are more common with shredded chicken



Damn near every restaurant I've eaten Migas has melty cheese on them including this morning in Weslaco. The ranchero sauce is the only normal variable with mine
