Tex Mex is the superior form of Mexican food.

Telltale sign that someone hasn't been to Mexico outside of tourist towns.

Telltale sign someone hasn't been to good texmex places outside of the touristy ones.

That's cute. Where do you think I'm from?

New place in town. Combo plate - cheese enchilada (good), tamale (meh) and taco (excellent). Margarita to wash it all down.

Took Brian's suggestion and had the machacado. Didn't know what to expect, but it reminded me of brisket/eggs. Not bad

Isn't truly authentic Mexican food a lot of seafood?

I usually go with the Los Dorados, hold the chicken or the Carnitas Fritas there. Tamales with chili gravy if I go to El Charro T.

If you haven't tried it, you should hit Chelis. Mexmex street cart food. It's on 77 between Martin Luther and the Fire Station.

Carne guisada often

Or a chili relleno

Or a combo plate with enchiladas and a tamale

Or tacos al pastor if it's a taco joint

Or a torta if they have good ones

Or fajitas (or even better a parillada platter) if I'm sharing with my wife

I suggest you try Fido's enchilada recipe. It's money if you are out of region. And this Mexican rice recipe is on point. https://www.justapinch.com/recipes/side/side-rice-side/mexican-rice.html

Yes. The taco truck is legit. My wife likes the black trailer (One and Only?), I think it's OKish. Bay Bay's is good on the rare occasion it's there. I've not tried the sushi trailer as it's usually an hour wait. And if you need a pho fix, Hoa Son just across the highway is very good.

I've heard good things about Cardenas (the dilapedated blue trailerhouse on 77 headed towards La Grange) but haven't tried them yet. Suzy's Sauce (on 77 kinda across from Immanuel) has really good breakfast tacos, but they don't cook until you order, so it's a bit of a wait, as opposed to Chihuahua's who will assemble your taco in under 30 seconds after you wait in line for an hour.

Do it. The tortillas are key. He makes his own. I'm lazy so I go with La Abuela corn tortillas.

I have a tortilla press, so I may give that a try. Past attempts at tortilla making didn't go so well. I used a cast iron skillet and I don't think I got it hot enough.

Our local DQ does enchiladas too. And they are surprisingly good, considering its fast food.

You can get the Mexican plate, which is 2 enchiladas, 2 tacos, and refried beans
