I tend to go a little FIDOverboard with mine. When I'm all in it's homemade ranchero sauce, home fried tostadas, fire roasted jalapenos, and Serrano crema. Eggs cooked in a disgusting amount of butter. I might have gained weight just thinking about them

You have my curiosity up…….

Lots of stuff is a "gauge" for me on Mexican food. An establishment's cheese enchiladas and carne guisada are good indicators of overall quality. You also must know there's real Manteca in those refrieds.

Unacceptable to eat any of those on anything BUT corn tortillas.

Barbacoa in flour tortillas is a travesty to me.
