I miss the chili relleno. Disappeared after Covid. Same with the fried fish tacos. My 2 favorite dishes so I rarely go anymore.

Chuy's is New Mexico-Mex, not Tex-Mex. We only go in green chili season. It's a cheap ripoff of the original Chuy's in Van Horn, Tx and only exists because Madden didn't like to fly.

Van Horn Chuy's stacked enchiladas are great. New Mexican-mex is really good.

Well yeah, if you order it that way. If you are a Dallas goober and call it a cheese taco, you will probably get a tortilla with some shredded cheese in it, or something like that.

I've always thought the guy that started Torchy's must have worked for Chuy's. Their queso is almost identical, and either rank as my favorite I can find.

Torchy's has good queso, but man, that place would be better if their tortillas weren't absolute garbage.

Went recently while back in Texas and both the corn and flour tortillas were different and better than in years past.

That is the most basic and entry level "tex-mex." There is no sauce making or skill or recipe. It is just cheese and a tortilla and queso. If that dish is anyone's barometer for a tex-mex/Mexican establishment then their opinion is irrelevant. What's next? Taco salad?

yet so easy to screw up with they use the wrong cheese for the queso and the filling.

Just came back from Chuy's and saw a sign saying that chile rellenos are coming back this month (albeit only temporarily). Now if they'd just bring back the green chile rice....

Not heresy at all. The meatless special at any Los Tios in Houston is my go-to while enchiladas verdes is my 2nd option.

This is a fact. A cheese or cheese & onion enchiladas with red sauce, not meat sauce, is the test. If they don't have red sauce then I know I am at a more metropolitan tex-mex spot that is probably a B on their best day. If they don't have a chile relleno or cheese & onion enchiladas then I know I am at a spot that caters to suburban women with tacos salads and margaritas and nothing on the menu has any spice or flavor other than greasy meat, tomatillo, and queso.

I've never been to a Mexican restaurant in San Antonio or South Texas that puts onions in cheese enchiladas. The first time I had onions served in cheese enchiladas was in Dallas. I love red sauce, but I've never seen it at a Tex-Mex joint down here either. It's all chile gravy. Are you from West Texas or something?

A small piece of me died when Mexican Manhattan closed down. I was eating there before I could walk.

Then the Mexican joint that hosted my grandparents 50th anniversary burned down and never returned. I forget the name of it but it was amazing, in SA as well.

Some restaurant in Houston had cheese and onion enchiladas when I was a kid. It wasn't Ninfas or Molina's. Maybe Casa Ole or Don Bravo.

Jacalas nachos were the BEST! Grew up eating there once a week. My Dad was a Dr. and when he was on call he'd tell the medical exchange to call him at Jacalas if they needed him. Great memories!!
