There is something missing from that recipe and Chuy's version. I've looked on the internet and almost all are the same or similar to the one in the posted link. It's close, but not exactly the same. Anyone have the recipe or suggestions on what is missing from the recipe in the link?

Went to the Colorado Springs location when I moved back to town last year. Disappointed to see that the happy hour cart wasn't still a thing and that you couldn't get charro beans. When you live out of TX you can never find charro beans anywhere so that was a bit upsetting. Food quality was nowhere what I remember from the TX locations I grew up on.

It's missing a small can of chopped green chilis that is pured with the pickled jalapeño and cilantro before folding into the ranch.

Yup.

OG wasn't great, but it was always solid and consistent. Last time I went even the bread sticks were a noticably cheaper quality than before, and that was very disappointing.

Yeah, everyone was talking up the 'Mexican' food in Santa Fe and it was just consistently average. They do weird sauces that are mostly flavorless. Sazon was solid but that's about the only place I remember.

I think New Mexican is better than what I would consider Texican tex-mex (greasy/meaty no technique food aimed at women wanting salad and people that cant handle spice) but more mexican inspire tex-mex like you see in South Texas or West Texas that is more sauce based but still has some of the Texas elements like american cheese or more usage of fresh jalapeno/serrano is superior to all.

There is a lot of nuance to tex-mex in this state and in the western part of America. I think we all agree that tex-mex from East Texas and Dallas down to parts of Austin just arent that good compared to the flavors of San Antonio, South Texas, and West Texas going towards New Mexico. Not sure I love Arizona or Cali mexican, too similar to Dallas/modern Austin. It is all good, no doubt but good and great are two different plates!

This is how spoiled Texans are. I've now been in Alabama since Feb of this year and haven't found any Mexican food as good as Chuy's. I'm also well aware that Chuy's is "Tex-Mex"

I was stationed in Fort Benning, GA a couple times. Went to Alabama a few times.

Just embrace the local cuisine there and don't try to hunt something that's not there. Welcome to the South baby!

Made some more and included the tomatillos (listed as optional) and green chiles. Both are needed to make it more closely taste like the restaurant version, IMO. I had an extra lime to use, so I added the optional lime juice, but I'm not sure that added anything significant. Thanks for the advice.

By Tex-Mex, I mean the traditional Tex-Mex that is served across the state. It's basically ground beef, tortillas, cumin, cheese and gravy. I'm not talking about the MEXICAN food that's served in the state. Just because it's Mexican food in Texas, doesn't make it Tex-Mex.

You'll find plenty of taquerias (especially in San Antonio and the Valley) that are serving authentic Mexican food with authentic flavor and not just plates of grease and melted cheese.

That's what I like about New Mexican food. They're actually using spices and flavor. A lot of their dishes more closely resemble the authentic stuff we're talking about. And those red and green chiles don't hurt either.

I'm glad there's a market for it. As for me and my family, we'll choose Tex-Mex 100 times out of 100.
