Closed cell foam 6" minimum on all walls and ceiling. Make sure no air envelope leaks

5/8" green board all around at minimum. You'll want a little humidity in there

Insulation underfloor. Lots of heat soak from your slab if you're in TX.

Plan for lighting but also add plugs as you'll probably change once built and you start looking at lighting once complete.

Get a high quality split cooling unit.

Wine shipping season has begun. I didn't order many 2020 Cali wines so the reallocated funds are bringing in a ton of Bordeaux and Champagnes. With some aged wines and current releases, I probably have enough French wines now to last the rest of my life.

Happy Thanksgiving wine thread. It's a shame that Gewurtztraminer doesn't get more love. IMO it's a better pairing than Pinot Noir with a traditional meal.

2018 William & Mary Shifflet Ranch Proprietary Red.

I REALLY like this wine. 60/40 Merlot/CF. Napa does the Right Bank and does it right. A smidge more oak than I'd prefer, but otherwise just stellar.

It was very good. TBH, we opened it mid afternoon and honestly didn't pay much attention to but it still seemed mostly fresh to me. I'm also not the most experience bubbles taster.

There will be very little secondary notes in that bottle right now. It'll be fresh with just a little mellowing. The 08's are just starting to show secondary notes.

makes sense for the classic houses, just wondering how a vintage no dosage was doing....

That's what I was talking about. Non dose growers age in a unique way and not always good/better. Some sugar is needed to balance the acid over long term.

The 82 Las Cases and 85 Mouton were both really good, not just "good for their age". Some old time Bordeaux funk too about 30 minutes to dissipate from the Mouton, and was then rich, still a touch of fruit and substantial tannin. Very layered and complex.

The Las Cases was good from the beginning. It's nose was a bit brighter and more pleasing, but was not quite as concentrated or complex, but we're talking shaving with a pretty fine edge here.

Any recs for readily available Bordeaux in the sub-$50
range that has a good amount of barnyard funk? I've been buying a few random bottles here and there but haven't found anything that hits the barnyard notes.

Interesting. Hadn't heard that yet. I think it's use has been modified from the massive tank use in the past. Very affordable to do in barrel now with much more control. I could see it being dialed back stylistically though. Certainly more modest use than in the recent past may be a good thing.

We see it as a very useful thing, used properly and judiciously when it can benefit the wine.

I'm developing more of a taste for dryer red wines, and I'm finding better luck with French reds. Looking for recommendations in the $40-100 range that are available through distribution (I'm in Frisco).

Some that I just bought based on reviews only but haven't tried yet:

Chateau Monbousquet St Emilion, 2016

Chateau Gloria St Julien, 2015

La Croix Ducru Beaucaillou , 2016

I don't know much, I'm not Bordeaux wise, but had a relatively well informed wine nerd say something along those lines to me. but so many houses and techniques...hard to say

thought it was very common in Piemonte? surprised you missed it. I'm a fan when done well, sometimes it comes across to me as very heavy and uninteresting, so I don't buy it often since I'm usually making a guess.
