If you don't know the story behind the name: obviously rooted in Germany, the act of freezing and removing some of the ice formed (which is the water portion, alcohol freezes at lower temps) it concentrates the liquid, raising the abv, is called freeze distillation. So Germans did this to bocks or doppelbocks and called them 'ice bocks'.

My uncle has done this with homebrew doppelbocks with great results. He can remove 25% of the volume or so in the form of ice, really boosting the abv. Then let age some more. I'm talking ward winning eisbocks!


I knew a little about the background of the style, but not all this. some cool info. anyone have any other eisbock brews to recommend that aren't too hard to come by? love the aventinus offering

I had the kulmbacher eisbock a while back and remember it being pretty good. Stateside I think kuhnhenn raspberry eisbock is supposed to be the best, but it's low bottle count and would have to be traded for.

Rogue Farms is a big deal. Barley, hops, rye, etc.

Well that's just it. I don't really think their small scale farming operation can accomplish what they want. I think this is more of an image thing to align themselves a little more with the "Austin mentality".

There's no doubt they've gotten the hippy commune vibe going. I doubt they'll source all of their ingredients at their farm, but I'm down with them trying to do so.

I have a fig tree out back. Maybe I'll ferment the juices and probably yield two beers out of it.

Oskar blues also has their own hop farm, and cattle farm to supply their restaurant.
New Belguim has a little hop area on their property as well.
And yeh, Rogue is like completely self contained...

Found these last night (Dallas, Whole Foods, Lomo Alto). Only one I have had previously is Audio Palette. Hard for me to pass up at $10, I really enjoyed it at the brewery.

Any updates on the Fantome Del Rey? I don't see any posts from them since their original addendum. I know a few of y'all have opened it since and found no issues.

Deschutes The Dissident 2015 was a complete impulse buy. What did I get?

I liked Fantome Del Rey. And as for The Dissident, you've got a very nice wine barrel aged sour. It's a mildly sour ale, you should be able to pick up on the wine barrel aging. Damn good beer.
