I learned to bartend at Studio 2818 during the 4-for-1 happy hours. It was owned by Gary Sebeck. Started as a barback and got paid $25 a day to clean the disco every morning. I also cleaned the pool at Doux Chene. Ended up bartending the Happy Hours because it was too busy then. (My rooomate's girfriend won the naming contest - it used to be Mansard House). I could do 32 margaritas out of one bottle by lining up the rocks glasses and pouring the whole bottle of tequila followed by sweet/sour and lime juice. Shake each glass one time and serve!
I then took my talents to Miranda's - the original bar where the Dixie Chicken snakes live. Don busted the wall between Miranda's and the Chicken over Christmas break in 78 (?) and all I did was pull kegs of beer from the walk-in all night (that's where the Kitchen is now). It went from hard liquor bar to draft beer and microwave nachos.
Surprised no one mentioned Rebel's on Texas Ave. We had a strong happy hour and all-you-can eat shrimp on Monday nights. Hickory Wind was the live band every weekend. Flaming Rebel Rouser's was the special drink of the house.
ETA: Because there was Dad/son owner manager when I worked there as a waitress. Danskin spaghetti strapped (no bra allowed) leotard with a wrap around skirt that was altered not to wrap around so your entire leg was exposed when walking. Metallic colored high heels. Mine were silver and my outfit was a dark rust colored. The older guy kept hitting on me offering to take me to Vegas for a weekend.
