If you want hipster/exotic tacos, which is how I classify Fuego and Torchy's, then go to Mad Taco, which is a level up IMO.34blast said:
The best and most popular places are Fuego and Torchy's Tacos. They are not really tex mex per say, but exotic tacos. Both have really good queso.
I don't like any of the tex mex that well in the area. Truthfully Chuy's during green chili fest. On the Border for fajitas are the best bets.
I would say Casa Rodriguez, Papa Perez or Lupe Tortilla next tier down are okay.
As others have said, classic Tex Mex isn't a strong point. We used to go to Ninfas a lot for the margaritas and fajitas but that was a long time ago and it hasn't been as good IMO since it moved from Harvey to the frontage road on 6 years ago. Actually had a waitress who didn't know what carnitas were.
Joses is actually still around. Moved from outside town on Harvey to Texas Ave in Bryan. Haven't been there in a long time but if you want "old school what was around when I was in college Tex-Mex" maybe check it out. Last time a visitor wanted TexMex we took them to the Los Cucos in Bryan. It was fine but nothing to get excited about IMO.
For mexican mexican, we sometimes go to Taqueria Arandas on Texas, which is a Houston chain. Yelp reviews are very bimodal.
