Every single time I've had wagyu and heard chefs discussing it's been that wagyu needs to be medium-rare not rare to allow the intramuscular fat to render into the meat more.

And a true wagyu of that size would be difficult to eat. There's so much fat content and they're so rich it fills you up pretty quickly.

And correct me if I'm wrong but the vast majority of Wagyu we come across here in the States is just a cross with Angus or something similar? Additionally we shouldn't expect a purebred Wagyu raised in the states to taste the same as one raised in Japan.

I think most Americans think they are getting Japanese Wagyu when they order wagyu at a grocery store or wherever and really they're not. It's quite different.

I miss my grandma's kolaches. Poppyseeds were my favorite, then cream cheese.
Bummer part is my mom can't make them as well as her mom could. Maybe that >65 year old clay mixing bowl grandma used.

If around here includes Brenham, have you tried the ones at Prasek's? They're in Sealy now too in addition to El Campo. Have a pretty good cream cheese and also have good Poppyseed rolls(loaf/strudel? whatever the right name is).

AustinCounty -- The great improvements to 290 have curtailed my opportunities to stop at Bellville Meat Market on the way to Grandma's. My kids and I love that place. I'll have to take the "long" way next time.

yes, it is a solid meat market. Little pricey, but always consistent. Can never go wrong with their dry sausage, or chipotle smoked sausage.

I always enjoyed their breakfast. It's been a couple of years since I've been but I need to stop by when I visit my in-laws nearby.

No way that place is still open. Haven't been through that way in a long time. We always called it "Barf's" when we were kids
