I personally know 3 seperate people that went to Europe for 2 weeks last summer. All of them returned saying they didn't gain a pound after eating bread and pastries the whole time.

A few things on this:

1. In europe (generally speaking), the percentage of processed foods as part of the daily diet compared to here is extremely low.
2. They typically have far fewer ingredients, little to no preservatives. It isn't unusual for daily grocery shopping to be the norm whereas we shop for weeks at a time here
3. Just by nature of geogpraphy and overall history in how civilization developed over there compared to here, most europeans get a significant amount more of daily exercise than we do because it is not unusual for somebody to live within walking distance of their job and walking is a major method of transportation. A buddy of mine was stationed over there and it was the same for him - he lost weight while there because of how much walking he did and the fact that the food there is far cleaner compared to ours.

He would easily get 10k steps in daily, often by lunch time he had that done. Now that he's back stateside he has a very difficult time getting that much activity in, and he said he's already put weight on. And that's with his wife being somewhat of a health nut with food.

Something like 70% of the caloric intake for the typical American today is obtained from seed oils that are used as cooking agents, additives, preservatives, etc. They are of zero nutritional value and add a massive amount of calories to our food chain.

The increase and profliferation of them in the food chain also coincides with the increase in a significant number of health issues ranging from arthritis to gut issues to high cholesterol.

I'm going to be off on the numbers here because i'm shooting from the hip, but at the turn of the 20th century I want to say that the average american consumed ~8 lbs of butter/lard/fat in their annual diet. Then we were all told how fat is bad and things like margarine and oils and what not were good for you. Today that ~8lbs of good fat has been replaced by about 30 gallons of seed oils. A significant portion of that 30 gallons comes from the fast food and eating out that we do way too much of annually.

The whole food pyramid crap that we were taught growing up is completely wrong and inverted. But that food pyramid was a marketing scheme that developed out of the food rationing system in WWII and then morphed over time through various changes pushed by the USDA.

We also consume an unGodly quantity of sugar here compared to most other places in the world. Sugar is a huge contributor to a host of our overall health problems and our brains react to it in almost the same way a drug addicts brain reacts to heroin - it is an addictive substance.

Our food supply is set up for quick and mass production of foods that then stay in warehouses and freezers until they are ready to go to your local grocery store.

To achieve this end they are over processed and then pumped full of additives and preservatives.

The preservatives and flavor enhancers they used to add were animal fat based.

However due to faulty or rigged (depending on your tin foil hat) studies that originated in the 1960's and 1970's people were convinced that animal fats were suddenly evil and we needed to transition to overprocessed plant based oils and sugars like high fructose corn syrup and manufactured flavor enhancers.

Since that time the incidence of autoimmune disorders, arthritis, gut issues, diabetes, and heart disease has skyrocketed.

There is certainly a huge correlation between the skyrocketing health issues and the change in our diets.

Our more sedentary lifestyle certainly affect it but when you have evidence from people living abroad where the biggest change is diet it's hard to argue that the added ingredients in our foods could not be having a negative effect as well.

Getting up and walking 4 more times a day is not going to cure diabetes or arthritis or krohns disease.

Also, olive oil is more meant for using at room temperature, as heating it can bring out more Omega 6, which is inflammatory. Also, you want cold pressed. If it has been heated at any time during extraction, it will have more Omega 6.

Avocado oil or coconut oil are better for cooking with. Or use beef tallow, lard, or ghee (clarified butter). Or you can just use a small pat of butter if cooking at low enough temperatures to not burn it.

How do you feel about grape seed oil?
It is high in Omega 6, so it's a "no go", for me. But the big thing is these things are oxidized from so much heating that goes on during their refinement.

Pretty sure you can get it on amazon.
You can also make your own beef "tallow" from your brisket trimmings. It works really well too.

How does it compare to goose fat? We cooked a goose for Christm one year, and the amount of fat that came from it was immense.

That goose fat smelled a lot gamier than Duck fat. Whoof that was a lot of fat.

I think the long neck was the most unnerving part of that experience.

Can't tell you that, as i've never cooked a goose or used the fat. Duck fat just imparts a wonderful flavor to potatoes. Had it for the first time at Vic and Anthony's, and like to do it on big meal days now.
