Well, Dr. M. came by after work and we enjoyed the snow, had a few cigars, and lifted a few good ones.

He still thinks that I have something wrong with me because I like Celis better than Chamay, but that's OK. If he wants to buy Chamay, I will sacrifice and drink it with him.

Good weather, good fun, good friends, good cigars, good beer......it doesn't get much better.

The first time I had Delerium Tremens was in a bar in Belgium. I asked the bartender what he recommended for this round. He put a glass on the table and filled it up with a beer. I looked at the glass and made a comment about seeing pink elephants....the bartender looked at me surprised and said I was seeing things and I might be too drunk to be in his bar and that he was about to kick me out. I pretended not to see them, but I saw them.

It is a great secular beer a bit better than Chimay. (not because of being secular)

My band rehearsed yesterday afternoon with the help of a bunch of this. Not as fancy as the Belgians, but good stuff on a cold wet day in Dallas...and we sounded really good by the 4th beer:

It's a delicate situation, really. The Czar was anticipating a brew night with the boys sometime last month, but alas, the boys were only available during the weekend on which the Czar's parents were visiting Washington from God's Country. In order to rectify the situation, two things have thus been given to the Czar. The Czar's parents have bestowed upon him a gift certificate for his birthday. Additionally, one my boys (the one most responsible for the unfortunate timing of the previous brewing event) elected to donate his previous batch of beer away as Christmas presents to friends and family. This generosity presented him with a predicament similar to mine... no homebrew on tap. It was thus decided that a T+1 brewday would commence. As a result, Imperial Smoked Porter is happily fermenting away as I type this. Transferal to the secondary fermentation vessel will occur this week. In the mean time, he (being my spiritual beer adviser) and I also decided to share high quality store-bought varieties of craft beer.

And there was much rejoicing.

Brethren, the Imperial Smoked Porter has now been racked to the secondary fermentation vessel. It was a sight to behold: dark brown, smokey beer. If this turns out, I may do a repeat with the addition of some oak chips.

I tried some Leffe Blond for the first time yesterday.

Also excellent, and the kicker is also that it was not as expensive. Chimay is probably 11 on a scale out of 10, because it is just that awesome, but Leffe Blond is about a 9

well was back at Spec's today, buying some stuff for a party tomorrow. Was checking out the bottles of Maredsous, the 8 and 10, when one of the employees started chatting with me.

He said he's had everything in the case, yet he always goes back to St. Bernardus Abt 12. Best ever he says...

So I bought a bottle...may have to test his rec tonight.

St. Bernardus Abt 12 rates rather high. It comes in at #3 over at Ratebeer.com. Many other beer geeks can't be that far off.

Oh I wasn't taking his advice over my dear beer brothers on Texags.

I would have never encountered Chimay or have even known of trappist beer had it not been for here!

This thread was in danger of disappearing, so I thought I would post useles beer information to bump it up.

Last Saturday I drank several, the actual amount will remain secret, Celis Grand Cru, and yes, once again, I heard the angels sing, and after a few more, I was singing also.

That stuff, at least for me, is still my favorite fruit of the barley.
