He is Chewie's son in canon (Aftermath books)... Lumpawaroo... but they call him Waroo instead of Lumpy.

Is this normal to add "key roles" after filming begins, or is it evidence of yet another massive story rewrite as they go along?

It's pretty normal. They've only been filming for a month, with five to six months left. They were never going to have the whole thing cast beforehand, and a lot of blockbusters like this don't. Smith could still be two or three months away from even filming his role. Also, he may not have been available to audition or read during preproduction. A lot of variables factor into stuff like this.
I'm going to assume it is probably related to shift of story after Carrie died. I'm sure all of that was already worked out way before today but not all the casting choices were finalized and ready to be published. Key roles can still turn out to be very little screen time.

The last movie was so great, killing off Leia with the Mary Poppins space take death finale, I think this movie should follow up with something equally iconic. Maybe kill off chewie while climbing a building in Manhattan getting shot at by biplanes until he falls to his death or or something.
