Some have already been mentioned but:
-Ender's Game
-Asimov's Foundation trilogy
-Old Man's War (first of a trilogy)
-The Forever War (a little like Old Man's War
-The Tripods Trilogy (first book series I remember reading as a kid, so made for a little younger audience but still good)
-Stirling's Emberverse series (original trilogy is great...fast forward a decade or two and then there were 7 more books. Some were good and some were slow, but overall I liked it.)
-read some of the short stories for the GoT world
-maybe some dystopian stuff if you haven't read them before like Brave New World, Fahrenheit 451, 1984, Lord of the Flies, etc.

They also have an omnibus edition of books 1-5 as an ebook. Link for that should be at top of page I linked.(Sorry I forgot it was not a trilogy but a series of five). This is the version I have and highly recommend it. Picked it up on sale for like $4.

I really enjoyed his style of writing. The books are not long individually either and flow together naturally. He was pretty much a nobody until that series and then broke out with how well it did on Amazon.

Also note that he did another series afterwards in the same setting but with a different story arc and characters. Wool 1-5 is the official place to start. He also opened up his world he created to other writers so there are a lot more "Wool" stuff out there. Similar to Star Wars expanded universe. It can get a little confusing at times.

Start at Shards of Honor and work linearly in time. The books are not quite self contained in their internal references. The short stories can be read after The Vor Game.

Noticed Calamity the last of The Recokeners just came out, listening to it on audio book great so far.

I tried Malazan on audio and just gave up on chapter 12, just didn't interest me at all.

For good sci-fi pulp I really enjoyed Bill Baldwin's Helmsman series and spin-offs.

Was David Eddings mentioned for the Belgariad / Mallorean series. Prob screwing up those series names as its been a while.

Harry Harrison's Stainless Steel Rat is also a good fun quick read. Not deep writing here. Mind candy and fun.

Faded Sun trilogy is very good.

and Agree with Brad_97, the Belgariad is one of my favorite book series ever. Would love to see a tv series or movie.

Would be remiss if I didn't put a plug in for my wife's science fiction series, the Starstruck series. Straight up warning though, it's young adult science fiction romance. Sort of a Twilight with aliens, but they aren't really quite aliens, it's complicated but explained. Very "safe" series for the kids. No sex, no vampires, and no gladiator children killing each other.

The first book has won numerous awards, the series has sold and continues to sell well, and the first book is free from all major ebook vendors.

I'm about halfway through Wool (by Hugh Howey) and I'm diggin' it. Post-apocalyptic dystopian novel where the outside world is in ruins, and humanity is confined to live in a ~150 story silo...or so you think.

Just to add on to the Hugh Howey praise, Wool, Shift and Dust are very good books. I've also read Sand, Beacon 23 and The Shell Collector. The were good books as well. I started Half-way Home and just don't find it as interesting. Another series is the Justice series by Anne Leckie.

I ordered Shift and Dust as soon as I finished, Wool was very entertaining though I feel like it sliiiightly came to a close too fast, but that didn't change the fact that it was a great read. Reading Red Rising now while I wait for those to come in the mail, and it's similar in a way. So far so good.

Didn't read through this thread yet, so these may have already been suggested, but here are some favorites of mine that weren't on your initial post:

Guy Gavriel Kay - he has many stand-alone books that are refreshing breaks from reading massive series. Some favorites of mine are Tigana and The Lions of Al-Rassan.

China Mieville - awesome books, and a lot are stand alones. Perdido Street Station and The Scar were both great.

Three Body Problem (series composed of Three Body Problem [2015 Hugo Award winner], Dark Forest, and Death's End) by Cixin Liu

Terrific series by a Chinese writer. I won't go into the plot, but it's not what I expected from a Chinese Sci-Fi, and the second book manages to be even better. I'm still reading the third book (about 2/3 through) so I'm saving judgment on it, but so far each book has had its own unique and fascinating theme that evolve out of the story so well.

Feist and Eddings were cornerstones of my early fantasy reading. I'm sure my love of them is colored by that.

Feist gets a bit prodding/repeative after the Kings Buccaneer, but I stuck it out til the end. He wraps it up pretty nicely.

Same with Eddings, as the second series is basically a revamp of the Belgariad, but the Belgariad is awesome.

Other fond memories from back then were the Deryni books by Katherine Kurtz and the first 5 or 6 Dragon riders of pern books by Anne Mcaffery.

For newer stuff I agree with many on your list or suggestions by others. Might try Brent weeks other series, the night Angel trilogy.

I was out on goodkind and the wot stuff, they drug on and bored me.

Some others i have stumbled upon with various Kindle programs:

Chaos Quarter books - David Welsh - sort of a Firefly type feel space saga.

Wings of War series by Bryce O'Connor a bit different main character, well written

If you use a kindle, consider the unlimited program. I have come across many good reads through there.
