I really enjoyed the tales from Mos eisley cantina (or at least I did 25 years ago). Took some characters that were maybe on screen for 2 seconds and built whole interweaving storylines. It would be interesting to see how they were able to hold those anthologies with the intertwined and building stories.

Tales of the Bounty Hunters is from the 5 that are on the Han Solo pursuit
IG-88s is about him being attaining sentience by mistake and becoming a bounty hunter in a quest to take over all computer systems everywhere including the Second Death Star.
Bossk's tale is all about the Trandoshans scale of the hunt and his tenuous partnership with a female human bounty hunter and her droid trying to doublecross him
4LOM and Zuckuss is about the two of them being totally freaked out that Vader will find out they had previously helped the Rebels on Hoth
Dengar's is his personal vendetta against Han Solo from a swoop race, the results of which put him in the bandages as a kid. He has a GREAT scene with Vader.
Boba Fett's tells a completely different back story, with him having been the "Journeyman Protector" Jaster Mereel who became a BH and is very isolated. After he brings in some guy who has this huge collection of music from centuries ago, the guy begs Fett to save the music, and Fett listens to it - sort of like the opera scene in Shawshank. It really shakes him up and he starts questioning what he's doing with his life. This is set several years after ROTJ with him escaping the Sarlaac. On Coruscant, Han Solo is having the same sort of midlife crisis and sneaks off world to a planet where he once won a fighting championship. They happen to see each other from afar, and the story ends (spoiler alert) with them both coming round a corner right into each other with weapons drawn, and neither knowing what to do.
