I live in Eugene, OR and finally found a "decent" Mexican place, but I still miss TexMex. I think my main complaint is the weird reddish orange sauce they put on everything when it should have chile con carne the way God intended.

It's a nationality, not a food either. The title of this thread has confused me since it was posted.

Caro's restaurant in RGC has had them since Pancho Villa was a corporal, they make it a big deal about their tacos and they are really good.

Also the venerable and very much missed Palmetto Inn of SPI and Harlingen, had a place in McAllen too way back, had them and they were excellent.

A few other places in South Texas and Mex have them as well.

I just read that article on the "puffy taco". They reference CDMX and a "gordita inflada" a variation of fried tortillas are what make puffy tacos. I am not that old, but growing up in Mex, CDMX to be precise, every quesadilla I had was a variation of a puffy taco for the most part, some pinched closed and fried and others somewhat open. Never had a non-fried quesadilla until moving to the states. Fried puffy tacos were common in many places, especially outside of the city where mechanized tortillas, way cheaper and easier, were not available.

I don't think there could really be an origin as I imagine all kinds of places served a variety of fried corn shapes and such. Sopes, which are a truly Mexican item that is not seen much in Tex-Mex land are fried round thick corn things out of masa. If big enough and pliant enough they can be folded over and eaten like a taco.

The glory of Mexican origin food is that there are so many ingredients and so many varieties and variations.

Authentic Mexican food can be good and certainly has its place, but like Mexico itself, Texas took it and made it 100 times better.

When I was a lad our local place had "The 3 Amigos" - 1 chicken, 1 cheese, and 1 beef enchilada. That was my go-to.
