#2 Sirloin- lean
#3 Filet- tender, not much flavor
#4 tbone/porterhouse- filet on one side, strip on the other, hard to cook evenly
#5 Strip- mediocre in every way

I used to not like NY strips until a Chef client of mine hooked me up with Prime ones. Very tender and excellent flavor. Now at a restaurant, I'm going with a rib eye every time.

I was a ribeye guy until my doctor told me I was going to die due to high cholesterol and that I needed to cut back on the fatty meats (FIFY protected). I started ordering the strip and came to enjoy them.

Also, while Ken Bull was VP-Cattle Procurement at Cargill, he visited our AGEC 340 class. I asked what his favorite cut was and he answered NY Strip. I figure between his last name and his job title, he should know.

As a Pharma rep especially between '04-'10 I was probably eating at least 2 Prime Steaks a week at some of the best restaurants and steakhouses in town. So maybe I'm not the culinarily expert you think I think I am, but, I guarantee you I have had more Prime steaks than just about any of the people on this board.

And whatever you think of the rest of my food doesn't change the fact I can cook a hell of a steak too.
