Simple, Tech and Baylor can't stand that A&M took off academically and athletically in the 80's and is now held in higher regard than they are.
Baylor has always wanted to be the Duke to UT's UNC, and for many years in the early days it was. However, because of A&M's growth, their academic and athletic rivalry with the Horns has been rendered meaningless. No one in Texas even thinks of Baylor and UT in the same sentence anymore and A&M is largely responsible for that.
Texas Tech likewise can't accept that we have become a better school than they have. A Raider would rather set his own grandmother on fire than admit to what every single ranking source on Earth already says is true. After all, once upon a time, our two schools were not so different. Then in the 80's A&M took off in academic and athletic achievements while Tech stood still.
This why they both so desperately cling to and try to perpetuate the old stereotype of a Texas A&M that no longer exists. It lessens the sting of A&M's surpassing them and they hope that they can sway popular opinion and potential students away from us if they can just get enough people to believe that Mississippi Burning and Deliverance were filmed at A&M.
