I've been making homemade beer-cheese sauce lately. It's a game changer for cheesesteaks. If I don't want to go to the trouble, white American and provolone

2 Tbls butter
2 Tbls all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon dry mustard
1 teaspoon Worcestershire sauce,
Few dashes of Tabasco
1 cup whole milk
1/2 cup beer
8oz sharp Cheddar cheese, shredded
2 slices deluxe American cheese

The original sandwich didn't even have cheese on it. Provolone was added in the 40s and cheesewiz was added in the 50s.

I, personally, don't like provolone very much. Swiss or pepperjack might be good substitutions.
