Well, damn. I just saw that Picasso (Vegas) closed. It has always been on my "next time" list.

Get the wine pairing. Last time I went it was absolutely the best wine pairing I've ever had. Wine pairings are always great, but this time several courses were so perfectly complemented by their wine that the wine pulled out additional flavor profiles from the food.

The same somm is still there, and he has the perfect name for his role - Aldo Sohm.

Aldo's wine bar is also on my list of places to visit. I'll look at the pairing when we're there, but the pairings on the sample menu on their website weren't that exciting to me.

I decided to see if I could remember mine not counting the local winners.

Bouchon - Yountville (lost it)
Bistro Jeanty - Yountville (lost it)

My favorite Bib Gourmand is probably Girl and the Goat in Chicago.

Went last October (this board was very helpful in getting us ready).

Amazing experience. We still talk about it all the time. Got to meet Chef Keller in the kitchen and take photos.

I would love to go back.

I think the guide got it mostly right. The reality is there are not many cities in the US that can pull of 3* places due to costs, clientele, etc. I thought they held Texas places to the same standards as shown by no 2 or 3* places. The large number of Bib Gourmand and others in the guide is a hopeful encouragement, and maybe some places will now look to up there game to be on par with the 2* and 3* places. The lists of others here are impressive and drove me crazy enough to try to remember where we have been, some below are no longer around or have lost stars. While Arzak in San Sebastin has always been our favorite, some of the 2* are right up there above many of the 3* in our book (Coque in Madrid and Ko). I guess I can add two new 1*s based on the Texas list (BCN and Tatsu) both of which I am a huge fan of.

I've never been to a Michelin rated restaurant. However, I went to Sushi Ginza Onodera in Kyoto. While that location doesn't have the stars, its other locations do. I didn't notice anything special. The food was very good and very cheap

Very Happy to see Steven McDonald of Papas Steak Houses named the first Michelin Guide Texas Sommelier of The Year!

Steven is a great friend of mine and we still talk quite often. Extremely well deserved honor for Steven.

I've been to Hestia. It was definitely interesting food, but not sure I'd choose it first over many places I've been to in Austin or Houston.

Yes, it is excellent. If you want to do the full meal deal, bring your high limit credit card. It's worth it though.

Per the website, $250ish per person with wine pairings. That doesn't strike me as excessive for a multicourse tasting menu.

Correct. It's not bad, but certainly isn't cheap. Dropping $500 plus TT&L on one meal is not your typical Saturday evening out though.
