Meat loaf: love it or hate it?

Love meatloaf (food and the singer)

I use '57 Sauce instead of Ketchup on top.

There are three things that are great cold:

Meatloaf
Pizza
Fried Chicken

Having meatloaf tonight. My wife makes an amazing meatloaf. We use venison/beef brisket hamburger meat. Then she tops it with bacon. Garlic mashed potatoes, and fresh steamed green beans. I'll be enjoying it tonight when the hail beats the windows out of my house, and the wind blows several trees down on top of it.

I love a good Meatloaf. My grandmothers and mom made it a lot with a ketchup based sauce when I was growing up. And then having a sandwich the next day was great. I'll eat it with brown gravy also. My wife hates meatloaf and ketchup, so we've never have it at home.

One of the bbq/smoking subreddits I'm on had someone talking about doing a smoked meatloaf with a log of mozzarella in the middle and using a marinara type sauce instead of a traditional ketchup or gravy and now that's on my list to do.

Generally hate.

Generally also hate Cracker Barrel. But CB meatloaf is fire.

Marinara works well in meatloaf. Try adding a little red chili sauce made from ancho and NM reds to the marinara to kick it up a bit.......of course then it wouldn't really be a "true" marinara sauce. I guess it would sorta be comparable to putting beans in chili.........

I did smoked, cheese-stuffed meatballs for our pre-ASU opener years back and they dom'd. Same basic meat structure.

And now I'm thinking smoked pepper jack cubes inside of a meatball. Smoked salsa for dippin'

I'm definitely going to buy a mini muffin pan just for smoker use now.

The only problem with the muffin pan is that the balls will sit in the gelatinous funk that oozes out. I used a wire rack and put it over another pan that caught all the meat smeg (to ease clean up).

And for meatloaf, my mom (via my Aunt's recipe) was famous with my buddies for her "good meatloaf"

Really just two layers of ground beef with the following as a stuffing:

  • Onions
  • Black olives
  • ham
  • swiss cheese

Was thinking either cooling rack on top of a sheet pan or mini muffin pan with the meatballs intentionally bigger than the cups thinking drainage from the fat would drip down. I may need to watch Alton Brown's meatball/meat loaf episode again.

Smoking a meatloaf. First time to try this.


3:45 at 250 to an internal of 165. Glazed the last 20 minutes with a BBQ sauce glaze I use on baby backs.

Big difference between marinara sauce and cooked ketchup.
True, my grandmother's meatloaf was awesome. She always did it free form in casserole dish (not touching the sides) so it got lots of craggly bits. She also only ever used her pasta gravy, not ketchup. I hate ketchup meatloaf and I hate the ones made in a loaf pan. Free form and pasta gravy are the way to go.

My wife makes a really good Italian meatloaf. Lean meat with Italian seasonings flattened out. Put mozzarella cheese on it and roll it up. Cook with marinara sauce. Serve with a side of pasta.

Good stuff and good sandwiches with leftovers.

BBQ prices are so stupid. It shouldn't cost you 2 bills (with tax and tip) to get a fairly average sized family BBQ dinner. Ever.

Back on the thread -- it also shouldn't cost you $20 for a 1/3 pound of ground scrap meat.

I'm sure the meat is a pretty small portion of that cost. If you want it seasoned, cooked and served with two sides in a restaurant, It'll run you $20.

Pioneer Woman's Cajun Meatloaf

This is my go-to recipe. The only changes I make are that I top the loaf with bacon slices and use Whataburger's Spicy Ketchup instead of regular ketchup.

Any body ever baked a meat loaf in a pie crust? I'm going to try it today. Maybe top the meat with a layer of mashed potatoes ....or maybe cheese. Maybe both.

I would blind parbake the pie crust first to give it good structure before you throw meat in it.

Also, I'm not in general a meatloaf fan so I'm speaking more out of my care about pies.

Edit to add: meatloaf throws off so much grease, I don't think this will end up appetizing because it will just be a pool of grease.

I've got 1/2 quart of frozen leftover lasagna sauce that wasn't used so I was just going to brown the raw hamburger, drain it and add the lasagna sauce and mix then put that mixture in the pie shell so excess grease shouldn't be a problem. So parbake the pie shell for what ....10 minutes or so?

Fat render would probably ruin the crust. I'd say bake the loaf in a pie pan first to get it into the right shape, do your best to lift it into a par baked crust, lay down your cheese, pipe your potatoes and bake until the peaks brown a bit to make it pretty. Sprinkle with parsley flake if you're trying to be fancy.

Be sure and mix an egg into your potatoes if you want them to brown. See photo

Explain it to me like I'm a stupid child. You add cooked ground meat to pasta sauce and call it meatloaf. Regardless of how you think of me, this makes no sense whatsoever. I would consider "Italian meatloaf" similar to a meatball recipe cooked in in a loaf pan. Coincidentally it's what I made for lunch today

If I called it Hungarian Goulash why should it matter to you? You seem to have this uncontrollable urge to tell complete strangers how they should and should not cook....have you ever sat down and thought about why?

I had never done one smoked before and Mrs Mathguy always took care of doing it in the over so I was a blank slate for temp and time

I used her recipe and then smoked it using the Meat Church process. Mustard to bind rub, smoked and glazed like babybacks. It was the best meatloaf I have ever had and growing up I despised meatloaf

I cook the same as a medium burger and take off around 145/150... Hate to dry it out and it'll cook up an additional 5 degrees after resting

I give up. I thought about it long and hard. Brown ground beef, add it to pasta sauce, pour it in a pie shell, call it meatloaf. That's just bizarre
